Ingredients

  • Pork shoulder - 300 grams, cubed
  • Onion - 1 medium, finely chopped
  • Garlic - 4 cloves, minced
  • Ginger - 1 tablespoon, grated
  • Tomato - 1 medium, pureed
  • Vinegar - 2 tablespoons (preferably malt vinegar)
  • Brown sugar - 1 teaspoon
  • Mustard seeds - 1 teaspoon
  • Cumin seeds - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1 teaspoon (adjust to taste)
  • Black pepper powder - 1/2 teaspoon
  • Cinnamon stick - 1 small piece
  • Bay leaves - 1
  • Salt - to taste
  • Oil - 2 tablespoons (vegetable or coconut)
  • Fresh cilantro - for garnish

Steps

  1. Heat the oil in a large pan over medium heat. Add mustard seeds and cumin seeds, allowing them to splutter.
  2. Add the finely chopped onion and sauté until golden brown.
  3. Stir in the minced garlic and grated ginger, cooking for an additional 2 minutes until fragrant.
  4. Add the cubed pork and sear until browned on all sides, about 5-7 minutes.
  5. Mix in the pureed tomato, vinegar, brown sugar, and all the spices (coriander powder, turmeric powder, red chili powder, black pepper, and cinnamon stick).
  6. Cook for another 5 minutes, stirring occasionally to combine the flavors.
  7. Add a cup of water and bring the mixture to a gentle boil. Reduce heat to low, cover, and let it simmer for 30-35 minutes until the pork is tender.
  8. Add salt to taste and remove from heat. Discard the bay leaves and cinnamon stick.
  9. Garnish with fresh cilantro before serving.
