- Pork shoulder - 300 grams, cubed
- Onion - 1 medium, finely chopped
- Garlic - 4 cloves, minced
- Ginger - 1 tablespoon, grated
- Tomato - 1 medium, pureed
- Vinegar - 2 tablespoons (preferably malt vinegar)
- Brown sugar - 1 teaspoon
- Mustard seeds - 1 teaspoon
- Cumin seeds - 1 teaspoon
- Coriander powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1 teaspoon (adjust to taste)
- Black pepper powder - 1/2 teaspoon
- Cinnamon stick - 1 small piece
- Bay leaves - 1
- Salt - to taste
- Oil - 2 tablespoons (vegetable or coconut)
- Fresh cilantro - for garnish
Steps
- Heat the oil in a large pan over medium heat. Add mustard seeds and cumin seeds, allowing them to splutter.
- Add the finely chopped onion and sauté until golden brown.
- Stir in the minced garlic and grated ginger, cooking for an additional 2 minutes until fragrant.
- Add the cubed pork and sear until browned on all sides, about 5-7 minutes.
- Mix in the pureed tomato, vinegar, brown sugar, and all the spices (coriander powder, turmeric powder, red chili powder, black pepper, and cinnamon stick).
- Cook for another 5 minutes, stirring occasionally to combine the flavors.
- Add a cup of water and bring the mixture to a gentle boil. Reduce heat to low, cover, and let it simmer for 30-35 minutes until the pork is tender.
- Add salt to taste and remove from heat. Discard the bay leaves and cinnamon stick.
- Garnish with fresh cilantro before serving.
