- Pork shoulder - 400 grams, cut into cubes
- Onion - 1 medium, finely chopped
- Garlic - 4 cloves, minced
- Ginger - 1 tablespoon, grated
- Tomato paste - 2 tablespoons
- Red wine vinegar - 3 tablespoons
- Brown sugar - 1 teaspoon
- Coconut milk - 200 ml
- Vegetable oil - 2 tablespoons
- Mustard seeds - 1 teaspoon
- Cumin seeds - 1 teaspoon
- Coriander powder - 1 tablespoon
- Turmeric powder - 1 teaspoon
- Red chili powder - 1 tablespoon (adjust to taste)
- Salt - to taste
- Fresh cilantro - for garnish
Steps
- In a bowl, marinate the pork cubes with red wine vinegar, brown sugar, garlic, ginger, salt, and half of the chili powder. Let it sit for at least 30 minutes.
- Heat the vegetable oil in a large pan over medium heat. Add the mustard seeds and cumin seeds, and sauté until they start to splutter.
- Add the chopped onions and cook until they are golden brown.
- Stir in the tomato paste, coriander powder, turmeric powder, and the remaining chili powder. Cook for another 2-3 minutes until the spices are fragrant.
- Add the marinated pork to the pan and cook until browned on all sides, about 5-7 minutes.
- Pour in the coconut milk and bring the mixture to a simmer. Cover the pan and let it cook for 25-30 minutes, or until the pork is tender.
- Taste and adjust seasoning if necessary. Garnish with fresh cilantro before serving.
- Serve hot with steamed rice or naan.
