- Pork (cubed) - 500 grams
- Onion (finely chopped) - 1 medium
- Tomato (chopped) - 1 medium
- Ginger-garlic paste - 1 tablespoon
- Green chilies (slit) - 2
- Vinegar - 60 ml
- Coconut oil - 2 tablespoons
- Mustard seeds - 1 teaspoon
- Cumin seeds - 1 teaspoon
- Turmeric powder - 1 teaspoon
- Red chili powder - 1 tablespoon
- Garam masala - 1 teaspoon
- Salt - to taste
- Fresh coriander leaves (for garnish) - a handful
Steps
- Heat coconut oil in a large pan over medium heat. Add mustard seeds and cumin seeds, allowing them to splutter.
- Add finely chopped onions and sauté until they turn golden brown.
- Stir in the ginger-garlic paste and green chilies, cooking for another 2 minutes until fragrant.
- Add the cubed pork to the pan, stirring well to coat with the onion mixture. Cook for about 5-7 minutes until the pork is browned.
- Add chopped tomatoes, turmeric powder, red chili powder, and salt. Mix well and cook until the tomatoes soften.
- Pour in the vinegar and stir to combine. Cover the pan and reduce the heat to low, allowing the pork to simmer for about 45 minutes, stirring occasionally.
- Once the pork is tender, sprinkle garam masala and mix well. Cook for an additional 5 minutes to let the flavors meld.
- Garnish with fresh coriander leaves before serving.
