Ingredients

  • Pork (cubed) - 500 grams
  • Onion (finely chopped) - 1 medium
  • Tomato (chopped) - 1 medium
  • Ginger-garlic paste - 1 tablespoon
  • Green chilies (slit) - 2
  • Vinegar - 60 ml
  • Coconut oil - 2 tablespoons
  • Mustard seeds - 1 teaspoon
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1 teaspoon
  • Red chili powder - 1 tablespoon
  • Garam masala - 1 teaspoon
  • Salt - to taste
  • Fresh coriander leaves (for garnish) - a handful

Steps

  1. Heat coconut oil in a large pan over medium heat. Add mustard seeds and cumin seeds, allowing them to splutter.
  2. Add finely chopped onions and sauté until they turn golden brown.
  3. Stir in the ginger-garlic paste and green chilies, cooking for another 2 minutes until fragrant.
  4. Add the cubed pork to the pan, stirring well to coat with the onion mixture. Cook for about 5-7 minutes until the pork is browned.
  5. Add chopped tomatoes, turmeric powder, red chili powder, and salt. Mix well and cook until the tomatoes soften.
  6. Pour in the vinegar and stir to combine. Cover the pan and reduce the heat to low, allowing the pork to simmer for about 45 minutes, stirring occasionally.
  7. Once the pork is tender, sprinkle garam masala and mix well. Cook for an additional 5 minutes to let the flavors meld.
  8. Garnish with fresh coriander leaves before serving.
