Ingredients

  • Pork shoulder - 300 grams, diced
  • Basmati rice - 150 grams
  • Onion - 1 medium, finely chopped
  • Tomato - 1 medium, chopped
  • Garlic - 3 cloves, minced
  • Ginger - 1-inch piece, grated
  • Green chili - 1, slit
  • Cumin seeds - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Salt - to taste
  • Cooking oil - 2 tablespoons
  • Water - 400 milliliters
  • Fresh coriander - for garnish

Steps

  1. Heat the cooking oil in a large pan over medium heat. Add cumin seeds and let them splutter.
  2. Add the chopped onions and sauté until they turn golden brown.
  3. Stir in the minced garlic, grated ginger, and slit green chili, cooking for another 2 minutes until fragrant.
  4. Add the diced pork and cook until it's browned on all sides.
  5. Mix in the chopped tomato, turmeric powder, coriander powder, and salt. Cook until the tomatoes soften and the oil separates from the mixture.
  6. Stir in the basmati rice, ensuring it's well coated with the spice mixture.
  7. Pour in the water and bring to a boil. Reduce the heat to low, cover the pan, and let it simmer for about 20 minutes or until the rice is cooked and has absorbed the water.
  8. Once done, remove from heat and let it sit covered for 5 minutes before fluffing the rice with a fork.
  9. Garnish with fresh coriander before serving.
