- Pork shoulder - 300 grams, cubed
- Onion - 1 medium, finely chopped
- Tomato - 1 medium, pureed
- Garlic - 4 cloves, minced
- Ginger - 1 inch, grated
- Green chili - 1, slit
- Coconut milk - 100 ml
- Cilantro - 2 tablespoons, chopped
- Vegetable oil - 2 tablespoons
- Cumin seeds - 1 teaspoon
- Coriander powder - 1 tablespoon
- Turmeric powder - 1/2 teaspoon
- Garam masala - 1 teaspoon
- Salt - to taste
- Water - 150 ml
Steps
- Heat the vegetable oil in a pan over medium heat. Add cumin seeds and let them sizzle for a few seconds.
- Add the finely chopped onion and sauté until it turns golden brown.
- Stir in minced garlic, grated ginger, and slit green chili. Cook for 2-3 minutes until fragrant.
- Add the cubed pork shoulder and cook until browned on all sides, about 5-7 minutes.
- Add the pureed tomato, coriander powder, turmeric powder, and salt. Mix well and cook for another 5 minutes.
- Pour in the water and bring the mixture to a boil. Reduce heat, cover, and simmer for 20 minutes until the pork is tender.
- Stir in the coconut milk and garam masala. Cook for an additional 5 minutes, allowing the flavors to meld.
- Garnish with chopped cilantro and serve hot with rice or roti.
