Ingredients

  • Pork shoulder - 300 grams, cubed
  • Onion - 1 medium, finely chopped
  • Tomato - 1 medium, pureed
  • Garlic - 4 cloves, minced
  • Ginger - 1 inch, grated
  • Green chili - 1, slit
  • Coconut milk - 100 ml
  • Cilantro - 2 tablespoons, chopped
  • Vegetable oil - 2 tablespoons
  • Cumin seeds - 1 teaspoon
  • Coriander powder - 1 tablespoon
  • Turmeric powder - 1/2 teaspoon
  • Garam masala - 1 teaspoon
  • Salt - to taste
  • Water - 150 ml

Steps

  1. Heat the vegetable oil in a pan over medium heat. Add cumin seeds and let them sizzle for a few seconds.
  2. Add the finely chopped onion and sauté until it turns golden brown.
  3. Stir in minced garlic, grated ginger, and slit green chili. Cook for 2-3 minutes until fragrant.
  4. Add the cubed pork shoulder and cook until browned on all sides, about 5-7 minutes.
  5. Add the pureed tomato, coriander powder, turmeric powder, and salt. Mix well and cook for another 5 minutes.
  6. Pour in the water and bring the mixture to a boil. Reduce heat, cover, and simmer for 20 minutes until the pork is tender.
  7. Stir in the coconut milk and garam masala. Cook for an additional 5 minutes, allowing the flavors to meld.
  8. Garnish with chopped cilantro and serve hot with rice or roti.
