- Pork shoulder - 300 grams, cut into bite-sized pieces
- Yogurt - 100 grams
- Onion - 1 medium, finely chopped
- Garlic - 3 cloves, minced
- Ginger - 1 inch piece, grated
- Green chili - 1, slit
- Cumin seeds - 1 teaspoon
- Coriander powder - 1 teaspoon
- Garam masala - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Salt - to taste
- Oil - 2 tablespoons
- Water - 200 ml
- Cilantro - for garnish
Steps
- In a mixing bowl, combine the pork pieces with yogurt, garlic, ginger, turmeric, coriander powder, and salt. Marinate for at least 30 minutes.
- Heat oil in a large pan over medium heat. Add cumin seeds and let them sizzle for a few seconds.
- Add finely chopped onions and cook until they are golden brown.
- Add the marinated pork mixture to the pan along with the slit green chili. Cook for about 10 minutes, stirring occasionally.
- Pour in the water and bring the mixture to a boil. Reduce the heat to low, cover, and simmer for 20-25 minutes or until the pork is tender.
- Stir in the garam masala and cook for an additional 5 minutes.
- Garnish with fresh cilantro before serving.
