Ingredients

  • Pork shoulder - 300 grams, cut into bite-sized pieces
  • Onion - 1 medium, thinly sliced
  • Garlic - 4 cloves, minced
  • Ginger - 1-inch piece, grated
  • Green chilies - 2, slit
  • Tomato - 1 medium, chopped
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Salt - to taste
  • Oil - 2 tablespoons
  • Fresh coriander leaves - for garnish

Steps

  1. Heat oil in a large pan over medium heat.
  2. Add the sliced onions and sauté until they turn golden brown.
  3. Stir in the minced garlic, grated ginger, and slit green chilies; cook for 1-2 minutes until fragrant.
  4. Add the pork pieces to the pan and cook, stirring occasionally, until the pork is browned on all sides.
  5. Sprinkle in the turmeric powder, red chili powder, coriander powder, and salt; mix well to coat the pork evenly with the spices.
  6. Add the chopped tomato to the pan and mix well; cover and cook for about 15 minutes, stirring occasionally.
  7. Once the pork is tender and cooked through, sprinkle garam masala on top and mix thoroughly.
  8. Garnish with fresh coriander leaves before serving.
