  • Pork shoulder - 300 grams, cubed
  • Basmati rice - 150 grams

  • Ginger - 1 tablespoon, minced
  • Garlic - 1 tablespoon, minced
  • Curry powder - 2 tablespoons
  • Coconut milk - 200 ml
  • Vegetable oil - 2 tablespoons
  • Cilantro - 2 tablespoons, chopped (for garnish)
  • Salt - to taste
  • Water - 500 ml

Steps

  1. Heat the vegetable oil in a large pan over medium heat. Add the chopped onion and sauté until translucent.
  2. Add the minced ginger and garlic, cooking for an additional 2 minutes until fragrant.
  3. Stir in the cubed pork shoulder, browning on all sides for about 5-7 minutes.
  4. Add the chopped tomato and curry powder, mixing well to coat the pork. Cook for another 3-4 minutes.
  5. Pour in the coconut milk and water, ensuring the pork is submerged. Season with salt to taste.
  6. Bring the mixture to a boil, then reduce the heat to low and cover. Simmer for 25-30 minutes, or until the pork is tender.
  7. While the curry is simmering, rinse the basmati rice under cold water until the water runs clear. Cook the rice according to package instructions.
  8. Once the pork is tender and the sauce has thickened, remove from heat and stir in the chopped cilantro.
  9. Serve the pork curry over a bed of basmati rice, garnishing with additional cilantro if desired.
