- Curry powder - 2 tablespoons
- Coconut milk - 200 ml
- Vegetable oil - 2 tablespoons

- Water - 500 ml
Steps
- Heat the vegetable oil in a large pan over medium heat. Add the chopped onion and sauté until translucent.
- Add the minced ginger and garlic, cooking for an additional 2 minutes until fragrant.
- Stir in the cubed pork shoulder, browning on all sides for about 5-7 minutes.
- Add the chopped tomato and curry powder, mixing well to coat the pork. Cook for another 3-4 minutes.
- Pour in the coconut milk and water, ensuring the pork is submerged. Season with salt to taste.
- Bring the mixture to a boil, then reduce the heat to low and cover. Simmer for 25-30 minutes, or until the pork is tender.
- While the curry is simmering, rinse the basmati rice under cold water until the water runs clear. Cook the rice according to package instructions.
- Once the pork is tender and the sauce has thickened, remove from heat and stir in the chopped cilantro.
- Serve the pork curry over a bed of basmati rice, garnishing with additional cilantro if desired.
