  • Fresh coconut - 50 grams, grated
  • Malvani masala - 2 tablespoons
  • Ginger-garlic paste - 1 tablespoon
  • Green chilies - 2, slit
  • Curry leaves - 8-10 leaves
  • Coconut oil - 2 tablespoons
  • Salt - to taste
  • Water - 200 ml
  • Coriander leaves - for garnish

Steps

  1. Heat coconut oil in a heavy-bottomed pot over medium heat.
  2. Add the chopped onions and sauté until they turn golden brown.
  3. Stir in the ginger-garlic paste and green chilies, cooking until fragrant.
  4. Add the chopped tomatoes and cook until they soften and blend into the mixture.
  5. Incorporate the pork cubes and cook until they are browned on all sides.
  6. Sprinkle the Malvani masala over the pork, mixing well to coat the meat.
  7. Add the grated coconut and curry leaves, stirring to combine.
  8. Pour in the water and bring the mixture to a boil.
  9. Reduce the heat, cover, and simmer for 30 minutes, or until the pork is tender.
  10. Adjust salt to taste and garnish with fresh coriander leaves before serving.
