- Pork shoulder - 400 grams, cut into cubes
- Coconut oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 4 cloves, minced
- Ginger - 1 inch, grated
- Green chilies - 2, slit
- Malvani masala - 2 tablespoons
- Tomato - 1 medium, pureed
- Coconut milk - 200 ml
- Salt - to taste
- Fresh coriander - for garnish
Steps
- Heat coconut oil in a heavy-bottomed pot over medium heat.
- Add the chopped onions and sauté until golden brown.
- Stir in the minced garlic, grated ginger, and slit green chilies, and sauté for another 2-3 minutes.
- Add the Malvani masala and cook until the spices are fragrant, about 1 minute.
- Incorporate the pork cubes, stirring well to coat them in the spice mixture, and cook for 5-7 minutes until they are browned.
- Pour in the pureed tomato and cook for another 5 minutes until the oil separates.
- Add the coconut milk and salt, stirring to combine, then bring to a gentle simmer.
- Cover the pot and let it cook for 20-25 minutes, or until the pork is tender.
- Garnish with fresh coriander before serving.
