Ingredients

  • Pork shoulder - 400 grams, cut into cubes
  • Coconut oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 4 cloves, minced
  • Ginger - 1 inch, grated
  • Green chilies - 2, slit
  • Malvani masala - 2 tablespoons
  • Tomato - 1 medium, pureed
  • Coconut milk - 200 ml
  • Salt - to taste
  • Fresh coriander - for garnish

Steps

  1. Heat coconut oil in a heavy-bottomed pot over medium heat.
  2. Add the chopped onions and sauté until golden brown.
  3. Stir in the minced garlic, grated ginger, and slit green chilies, and sauté for another 2-3 minutes.
  4. Add the Malvani masala and cook until the spices are fragrant, about 1 minute.
  5. Incorporate the pork cubes, stirring well to coat them in the spice mixture, and cook for 5-7 minutes until they are browned.
  6. Pour in the pureed tomato and cook for another 5 minutes until the oil separates.
  7. Add the coconut milk and salt, stirring to combine, then bring to a gentle simmer.
  8. Cover the pot and let it cook for 20-25 minutes, or until the pork is tender.
  9. Garnish with fresh coriander before serving.
