Ingredients

  • Pork shoulder - 400 grams, cut into cubes
  • Coconut oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 4 cloves, minced
  • Ginger - 1 tablespoon, grated
  • Tomato - 1 medium, chopped
  • Goan curry powder - 2 tablespoons
  • Turmeric powder - 1 teaspoon
  • Coconut milk - 200 ml
  • Salt - to taste
  • Fresh coriander - for garnish
  • Green chili - 1, slit (optional)
  • Water - 100 ml

Steps

  1. Heat coconut oil in a large pan over medium heat. Add the chopped onion and sauté until golden brown.
  2. Stir in the minced garlic and grated ginger, cooking for another minute until fragrant.
  3. Add the chopped tomato and cook until soft, about 5 minutes.
  4. Sprinkle in the Goan curry powder and turmeric powder, stirring to combine and cook for 2 minutes.
  5. Add the pork cubes to the pan, stirring to coat them with the spice mixture. Cook for about 5 minutes until the pork is browned.
  6. Pour in the coconut milk and water, stirring well. Bring to a simmer and reduce the heat to low.
  7. Cover and cook for 30-35 minutes, or until the pork is tender, stirring occasionally. Adjust salt to taste.
  8. If using, add the slit green chili for extra heat during the last 10 minutes of cooking.
  9. Once done, garnish with fresh coriander before serving.
