- Pork shoulder - 300 grams, cut into bite-sized pieces
- Onion - 1 medium, finely chopped
- Tomato - 1 medium, pureed
- Garlic - 4 cloves, minced
- Ginger - 1 inch piece, grated
- Green chili - 1, slit
- Coconut milk - 200 ml
- Curry powder - 2 tablespoons
- Turmeric powder - 1 teaspoon
- Cumin seeds - 1 teaspoon
- Coriander powder - 1 teaspoon
- Salt - to taste
- Oil - 2 tablespoons
- Fresh cilantro - for garnish
Steps
- Heat oil in a large pan over medium heat. Add cumin seeds and let them sizzle for a few seconds.
- Add the chopped onions and sauté until they turn golden brown.
- Stir in the minced garlic, grated ginger, and slit green chili. Cook for another 2 minutes until fragrant.
- Add the pork pieces to the pan and brown them on all sides for about 5-7 minutes.
- Stir in the turmeric powder, coriander powder, and curry powder. Mix well to coat the pork with spices.
- Add the pureed tomato and cook for 5 minutes until the mixture thickens.
- Pour in the coconut milk and season with salt. Bring to a simmer, cover, and cook for 25-30 minutes until the pork is tender.
- Once cooked, garnish with fresh cilantro and serve hot with rice or naan.
