Ingredients

  • Pork shoulder - 300 grams, cut into bite-sized pieces
  • Onion - 1 medium, finely chopped
  • Tomato - 1 medium, pureed
  • Garlic - 4 cloves, minced
  • Ginger - 1 inch piece, grated
  • Green chili - 1, slit
  • Coconut milk - 200 ml
  • Curry powder - 2 tablespoons
  • Turmeric powder - 1 teaspoon
  • Cumin seeds - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Salt - to taste
  • Oil - 2 tablespoons
  • Fresh cilantro - for garnish

Steps

  1. Heat oil in a large pan over medium heat. Add cumin seeds and let them sizzle for a few seconds.
  2. Add the chopped onions and sauté until they turn golden brown.
  3. Stir in the minced garlic, grated ginger, and slit green chili. Cook for another 2 minutes until fragrant.
  4. Add the pork pieces to the pan and brown them on all sides for about 5-7 minutes.
  5. Stir in the turmeric powder, coriander powder, and curry powder. Mix well to coat the pork with spices.
  6. Add the pureed tomato and cook for 5 minutes until the mixture thickens.
  7. Pour in the coconut milk and season with salt. Bring to a simmer, cover, and cook for 25-30 minutes until the pork is tender.
  8. Once cooked, garnish with fresh cilantro and serve hot with rice or naan.
