- Tomato, pureed - 1 medium
- Garlic cloves, minced - 3
- Ginger, grated - 1 inch piece
- Green chilies, slit - 2
- Red chili powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Garam masala - 1 teaspoon
- Cumin seeds - 1/2 teaspoon
- Coriander powder - 1 teaspoon
- Salt - to taste
- Oil - 2 tablespoons
- Fresh cilantro, chopped - for garnish
- Water - 200 ml
Steps
- Heat oil in a pan over medium heat and add cumin seeds, allowing them to sizzle.
- Add the chopped onions and sauté until they are golden brown.
- Stir in the minced garlic, grated ginger, and slit green chilies; cook for 2 minutes.
- Add the cubed pork shoulder to the pan and sauté until browned on all sides.
- Incorporate the pureed tomato, red chili powder, turmeric powder, coriander powder, and salt; mix well.
- Pour in the water, bring to a boil, then reduce heat to low and cover the pan.
- Simmer for 25 minutes, stirring occasionally, until the pork is tender and the sauce thickens.
- Finish by adding garam masala and stirring well. Cook for an additional 2 minutes.
- Garnish with fresh cilantro before serving.
