Ingredients

  • Pork shoulder, cubed - 300 grams
  • Onion, finely chopped - 1 medium
  • Tomato, pureed - 1 medium
  • Garlic cloves, minced - 3
  • Ginger, grated - 1 inch piece
  • Green chilies, slit - 2
  • Red chili powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Garam masala - 1 teaspoon
  • Cumin seeds - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Salt - to taste
  • Oil - 2 tablespoons
  • Fresh cilantro, chopped - for garnish
  • Water - 200 ml

Steps

  1. Heat oil in a pan over medium heat and add cumin seeds, allowing them to sizzle.
  2. Add the chopped onions and sauté until they are golden brown.
  3. Stir in the minced garlic, grated ginger, and slit green chilies; cook for 2 minutes.
  4. Add the cubed pork shoulder to the pan and sauté until browned on all sides.
  5. Incorporate the pureed tomato, red chili powder, turmeric powder, coriander powder, and salt; mix well.
  6. Pour in the water, bring to a boil, then reduce heat to low and cover the pan.
  7. Simmer for 25 minutes, stirring occasionally, until the pork is tender and the sauce thickens.
  8. Finish by adding garam masala and stirring well. Cook for an additional 2 minutes.
  9. Garnish with fresh cilantro before serving.
