- Basmati rice - 200 grams
- Pork shoulder, diced - 300 grams
- Onion, thinly sliced - 1 medium
- Tomato, chopped - 1 medium
- Yogurt - 100 grams
- Garlic paste - 1 tablespoon
- Ginger paste - 1 tablespoon
- Green chili, slit - 1
- Biryani masala - 2 teaspoons
- Cumin seeds - 1 teaspoon
- Coriander powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Garam masala - 1 teaspoon
- Cilantro, chopped - 2 tablespoons
- Mint leaves, chopped - 2 tablespoons
- Cooking oil - 3 tablespoons
- Salt - to taste
- Water - 500 ml
Steps
- Wash the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- In a large pot, heat the cooking oil over medium heat and add cumin seeds. Once they splutter, add the sliced onions and sauté until golden brown.
- Add the garlic paste, ginger paste, and green chili to the pot, sautéing for another 2 minutes until fragrant.
- Stir in the diced pork and cook for about 5-7 minutes until it begins to brown.
- Add chopped tomatoes, yogurt, biryani masala, coriander powder, turmeric powder, and salt. Mix well and cover the pot to simmer for 10-15 minutes, allowing the pork to absorb the flavors.
- In a separate pot, bring 500 ml of water to a boil. Add the soaked basmati rice and cook until it's about 70% done (approximately 5-7 minutes). Drain the rice.
- Layer the partially cooked rice over the pork mixture in the pot. Sprinkle garam masala, chopped cilantro, and mint leaves on top.
- Cover the pot tightly with a lid and cook on low heat for 20-25 minutes, allowing the rice to finish cooking and absorb the flavors.
- Once done, fluff the biryani gently with a fork and serve hot, garnished with additional cilantro and mint if desired.
