Pongal with Moong Dal

Ingredients
- Rice - 1 cup (200g)
- Moong Dal - 1/2 cup (100g)
- Water - 4 cups (1 liter)
- Ghee - 2 tablespoons (30g)
- Cumin seeds - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Ginger - 1 teaspoon (finely chopped)
- Cashews - 2 tablespoons (chopped)
- Curry leaves - 10 leaves
- Salt - to taste
Steps
- Rinse the rice and moong dal together under cold water until the water runs clear. Drain well.
- In a pot, add the rinsed rice and moong dal along with 4 cups of water. Bring to a boil over medium heat.
- Once boiling, reduce the heat to low, cover, and simmer for about 20 minutes or until the rice and dal are soft and cooked through.
- While the rice and dal are cooking, heat ghee in a small pan over medium heat.
- Add cumin seeds and let them splutter, then add black pepper, chopped ginger, cashews, and curry leaves. Sauté until the cashews turn golden brown.
- Once the rice and dal are cooked, add the sautéed mixture to the pot and stir well. Season with salt to taste.
- Cook for an additional 2-3 minutes on low heat, stirring gently to combine all the flavors.
- Serve hot with coconut chutney or sambar on the side.
