Pongal Puri

Ingredients
- Rice - 100 grams
- Split yellow moong dal - 50 grams
- Water - 500 ml
- Black mustard seeds - 1 teaspoon
- Cumin seeds - 1 teaspoon
- Ginger (grated) - 1 teaspoon
- Green chilies (slit) - 1-2
- Curry leaves - 10 leaves
- Salt - to taste
- Oil (for frying puris) - 200 ml
- Whole wheat flour - 100 grams
- Semolina - 50 grams
- Water (for dough) - as needed
- Salt (for dough) - a pinch
Steps
- Rinse the rice and split yellow moong dal together in water until the water runs clear.
- In a pot, combine the rinsed rice and dal with 500 ml of water and a pinch of salt. Cook on medium heat until the rice and dal are soft and mushy, about 20 minutes.
- In a small pan, heat 1 tablespoon of oil and add black mustard seeds. Once they start to splutter, add cumin seeds, grated ginger, green chilies, and curry leaves. Sauté for a minute until fragrant.
- Add the spice mixture to the cooked rice and dal, mixing well. Allow it to simmer for another 5 minutes, then remove from heat.
- In a bowl, mix whole wheat flour, semolina, and a pinch of salt. Gradually add water to form a stiff dough. Knead for a few minutes until smooth and pliable.
- Divide the dough into small balls and roll them out into thin circles (puris).
- Heat oil in a deep pan for frying. Once hot, carefully add the puris one at a time, frying until they puff up and turn golden brown on both sides.
- Remove the puris and drain on paper towels to absorb excess oil.
- Serve the pongal hot with crispy puris, garnished with fresh coriander if desired.
