Pongal Puri

Ingredients

  • Rice - 100 grams
  • Split yellow moong dal - 50 grams
  • Water - 500 ml
  • Black mustard seeds - 1 teaspoon
  • Cumin seeds - 1 teaspoon
  • Ginger (grated) - 1 teaspoon
  • Green chilies (slit) - 1-2
  • Curry leaves - 10 leaves
  • Salt - to taste
  • Oil (for frying puris) - 200 ml
  • Whole wheat flour - 100 grams
  • Semolina - 50 grams
  • Water (for dough) - as needed
  • Salt (for dough) - a pinch

Steps

  1. Rinse the rice and split yellow moong dal together in water until the water runs clear.
  2. In a pot, combine the rinsed rice and dal with 500 ml of water and a pinch of salt. Cook on medium heat until the rice and dal are soft and mushy, about 20 minutes.
  3. In a small pan, heat 1 tablespoon of oil and add black mustard seeds. Once they start to splutter, add cumin seeds, grated ginger, green chilies, and curry leaves. Sauté for a minute until fragrant.
  4. Add the spice mixture to the cooked rice and dal, mixing well. Allow it to simmer for another 5 minutes, then remove from heat.
  5. In a bowl, mix whole wheat flour, semolina, and a pinch of salt. Gradually add water to form a stiff dough. Knead for a few minutes until smooth and pliable.
  6. Divide the dough into small balls and roll them out into thin circles (puris).
  7. Heat oil in a deep pan for frying. Once hot, carefully add the puris one at a time, frying until they puff up and turn golden brown on both sides.
  8. Remove the puris and drain on paper towels to absorb excess oil.
  9. Serve the pongal hot with crispy puris, garnished with fresh coriander if desired.
