  • Fish (firm white fish like cod) - 300 grams
  • Coconut oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 3 cloves, minced
  • Ginger - 1 inch piece, grated
  • Green chilies - 2, slit
  • Tomato - 1 medium, chopped
  • Coconut milk - 200 ml
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Salt - to taste
  • Fresh coriander leaves - for garnish

Steps

  1. Heat coconut oil in a pan over medium heat.
  2. Add finely chopped onions and sauté until translucent.
  3. Stir in minced garlic, grated ginger, and slit green chilies; cook for 2 minutes until fragrant.
  4. Add the chopped tomato and cook until soft.
  5. Sprinkle in turmeric powder, red chili powder, coriander powder, and salt; mix well and cook for another 2 minutes.
  6. Pour in the coconut milk and bring it to a gentle simmer.
  7. Add the fish pieces and cook for 8-10 minutes, or until the fish is cooked through and flakes easily.
  8. Finish with garam masala and adjust salt to taste.
  9. Garnish with fresh coriander leaves before serving.
