Pithla Bhakri

Ingredients
- Besan (gram flour) - 100 grams
- Onion - 1 medium, finely chopped
- Green chili - 1, finely chopped
- Ginger - 1 teaspoon, grated
- Turmeric powder - 1/2 teaspoon
- Coriander powder - 1 teaspoon
- Cumin seeds - 1/2 teaspoon
- Mustard seeds - 1/2 teaspoon
- Salt - to taste
- Water - 400 ml
- Cilantro (coriander leaves) - 2 tablespoons, chopped
- Whole wheat flour - 150 grams
- Oil - 2 tablespoons (for cooking the bhakri)
- Water - as needed for the dough
Steps
- In a mixing bowl, combine whole wheat flour and a pinch of salt. Gradually add water and knead until a soft dough forms. Cover and let it rest for 10 minutes.
- Heat 1 tablespoon of oil in a pan over medium heat. Add mustard seeds and cumin seeds; let them splutter.
- Add chopped onions, green chili, and ginger to the pan. Sauté until onions become translucent.
- Stir in turmeric powder, coriander powder, and salt. Mix well.
- Add besan (gram flour) to the pan and roast for 2-3 minutes until it turns slightly golden.
- Pour in 400 ml of water gradually while stirring to avoid lumps. Cook until the mixture thickens, about 5-7 minutes. Stir in chopped cilantro at the end.
- Meanwhile, divide the rested dough into equal portions and roll each portion into a flat circle (bhakri) about 6-7 inches in diameter.
- Heat a tawa or skillet over medium heat. Cook each bhakri for about 2-3 minutes on each side, brushing with a little oil until golden and cooked through.
- Serve the hot Pithla with bhakri, garnished with extra cilantro if desired.
