Pithla Bhakri

Pithla Bhakri is a traditional Maharashtrian dish that combines a spicy gram flour curry with a rustic flatbread made from whole wheat. This dairy-free breakfast is not only wholesome but also packed with flavor and nutrients.

Ingredients

  • Besan (gram flour) - 100 grams
  • Onion - 1 medium, finely chopped
  • Green chili - 1, finely chopped
  • Ginger - 1 teaspoon, grated
  • Turmeric powder - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Cumin seeds - 1/2 teaspoon
  • Mustard seeds - 1/2 teaspoon
  • Salt - to taste
  • Water - 400 ml
  • Cilantro (coriander leaves) - 2 tablespoons, chopped
  • Whole wheat flour - 150 grams
  • Oil - 2 tablespoons (for cooking the bhakri)
  • Water - as needed for the dough

Steps

  1. In a mixing bowl, combine whole wheat flour and a pinch of salt. Gradually add water and knead until a soft dough forms. Cover and let it rest for 10 minutes.
  2. Heat 1 tablespoon of oil in a pan over medium heat. Add mustard seeds and cumin seeds; let them splutter.
  3. Add chopped onions, green chili, and ginger to the pan. Sauté until onions become translucent.
  4. Stir in turmeric powder, coriander powder, and salt. Mix well.
  5. Add besan (gram flour) to the pan and roast for 2-3 minutes until it turns slightly golden.
  6. Pour in 400 ml of water gradually while stirring to avoid lumps. Cook until the mixture thickens, about 5-7 minutes. Stir in chopped cilantro at the end.
  7. Meanwhile, divide the rested dough into equal portions and roll each portion into a flat circle (bhakri) about 6-7 inches in diameter.
  8. Heat a tawa or skillet over medium heat. Cook each bhakri for about 2-3 minutes on each side, brushing with a little oil until golden and cooked through.
  9. Serve the hot Pithla with bhakri, garnished with extra cilantro if desired.
