Pithla

Pithla is a traditional Maharashtrian dish made from besan (gram flour) that is cooked into a savory, spicy curry. This vegan appetizer is hearty, flavorful, and pairs wonderfully with rice or chapati.

Ingredients

  • Besan (gram flour) - 100 grams
  • Water - 400 ml
  • Onion - 1 medium, finely chopped
  • Green chili - 1, slit
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1 teaspoon
  • Cumin seeds - 1/2 teaspoon
  • Mustard seeds - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Salt - to taste
  • Oil - 2 tablespoons
  • Fresh coriander leaves - for garnish

Steps

  1. Heat the oil in a pan over medium heat. Add the mustard seeds and cumin seeds, and let them crackle.
  2. Add chopped onions, green chili, garlic, and ginger. Sauté until the onions turn translucent.
  3. In a bowl, mix besan with water, turmeric powder, red chili powder, coriander powder, and salt to form a smooth batter.
  4. Pour the besan mixture into the pan with the sautéed onions, stirring continuously to avoid lumps.
  5. Cook the mixture on medium heat for about 10-15 minutes, stirring frequently, until it thickens and starts to leave the sides of the pan.
  6. Once done, remove from heat and garnish with fresh coriander leaves before serving.
