Pithla
Pithla is a traditional Maharashtrian dish made from besan (gram flour) that is cooked into a savory, spicy curry. This vegan appetizer is hearty, flavorful, and pairs wonderfully with rice or chapati.

- Besan (gram flour) - 100 grams
- Water - 400 ml
- Onion - 1 medium, finely chopped
- Green chili - 1, slit
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1 teaspoon
- Cumin seeds - 1/2 teaspoon
- Mustard seeds - 1/2 teaspoon
- Coriander powder - 1 teaspoon
- Salt - to taste
- Oil - 2 tablespoons
- Fresh coriander leaves - for garnish
Steps
- Heat the oil in a pan over medium heat. Add the mustard seeds and cumin seeds, and let them crackle.
- Add chopped onions, green chili, garlic, and ginger. Sauté until the onions turn translucent.
- In a bowl, mix besan with water, turmeric powder, red chili powder, coriander powder, and salt to form a smooth batter.
- Pour the besan mixture into the pan with the sautéed onions, stirring continuously to avoid lumps.
- Cook the mixture on medium heat for about 10-15 minutes, stirring frequently, until it thickens and starts to leave the sides of the pan.
- Once done, remove from heat and garnish with fresh coriander leaves before serving.
