Ingredients
- Basmati rice - 30g
- Milk - 500ml
- Sugar - 40g
- Pistachios (shelled and crushed) - 30g
- Cardamom powder - 1/4 tsp
- Rose water - 1 tsp
- Almonds (sliced, for garnish) - 10g
- Pistachios (for garnish) - 10g
Steps
- Soak the basmati rice in water for 30 minutes. Drain and set aside.
- In a blender, grind the soaked rice to a coarse paste with a little milk.
- In a heavy-bottomed pan, bring the remaining milk to a boil over medium heat.
- Once boiling, add the rice paste to the milk and stir continuously to avoid lumps.
- Reduce the heat and cook for 15-20 minutes, stirring often, until the mixture thickens.
- Add sugar, crushed pistachios, cardamom powder, and rose water, and mix well.
- Cook for another 5 minutes, then remove from heat and let it cool slightly.
- Pour the phirni into serving bowls and refrigerate for at least 2 hours.
- Before serving, garnish with sliced almonds and additional crushed pistachios.
