Ingredients

  • Basmati rice - 30g
  • Milk - 500ml
  • Sugar - 40g
  • Pistachios (shelled and crushed) - 30g
  • Cardamom powder - 1/4 tsp
  • Rose water - 1 tsp
  • Almonds (sliced, for garnish) - 10g
  • Pistachios (for garnish) - 10g

Steps

  1. Soak the basmati rice in water for 30 minutes. Drain and set aside.
  2. In a blender, grind the soaked rice to a coarse paste with a little milk.
  3. In a heavy-bottomed pan, bring the remaining milk to a boil over medium heat.
  4. Once boiling, add the rice paste to the milk and stir continuously to avoid lumps.
  5. Reduce the heat and cook for 15-20 minutes, stirring often, until the mixture thickens.
  6. Add sugar, crushed pistachios, cardamom powder, and rose water, and mix well.
  7. Cook for another 5 minutes, then remove from heat and let it cool slightly.
  8. Pour the phirni into serving bowls and refrigerate for at least 2 hours.
  9. Before serving, garnish with sliced almonds and additional crushed pistachios.
