- Pistachios - 100 grams
- Semolina (Sooji) - 50 grams
- Unsalted butter - 30 grams
- Sugar - 60 grams
- Milk - 200 ml
- Water - 100 ml
- Ground cardamom - 1/2 teaspoon
- Chopped pistachios - for garnish
- Saffron strands - a pinch (optional)
Steps
- Soak the pistachios in hot water for 15 minutes, then peel and grind them into a coarse paste.
- In a pan, heat the butter over medium heat until melted, then add the semolina and roast until it turns golden brown, stirring continuously.
- Add the pistachio paste to the roasted semolina and mix well, cooking for another 2-3 minutes.
- In a separate saucepan, combine the milk, water, sugar, and ground cardamom, and bring it to a gentle boil.
- Slowly pour the milk mixture into the semolina and pistachio mixture, stirring continuously to avoid lumps.
- Cook the mixture over low heat for about 10-12 minutes until it thickens and starts to leave the sides of the pan.
- If using, add the saffron strands and mix well.
- Transfer the halwa to a greased plate, level it out, and allow it to cool for a few minutes.
- Garnish with chopped pistachios before serving warm.
