Ingredients

  • Pistachios - 100 grams
  • Semolina (Sooji) - 50 grams
  • Unsalted butter - 30 grams
  • Sugar - 60 grams
  • Milk - 200 ml
  • Water - 100 ml
  • Ground cardamom - 1/2 teaspoon
  • Chopped pistachios - for garnish
  • Saffron strands - a pinch (optional)

Steps

  1. Soak the pistachios in hot water for 15 minutes, then peel and grind them into a coarse paste.
  2. In a pan, heat the butter over medium heat until melted, then add the semolina and roast until it turns golden brown, stirring continuously.
  3. Add the pistachio paste to the roasted semolina and mix well, cooking for another 2-3 minutes.
  4. In a separate saucepan, combine the milk, water, sugar, and ground cardamom, and bring it to a gentle boil.
  5. Slowly pour the milk mixture into the semolina and pistachio mixture, stirring continuously to avoid lumps.
  6. Cook the mixture over low heat for about 10-12 minutes until it thickens and starts to leave the sides of the pan.
  7. If using, add the saffron strands and mix well.
  8. Transfer the halwa to a greased plate, level it out, and allow it to cool for a few minutes.
  9. Garnish with chopped pistachios before serving warm.
