Ingredients

  • Fresh chhena - 200 grams
  • Pistachios, finely chopped - 30 grams
  • Powdered sugar - 30 grams
  • Cardamom powder - 1/2 teaspoon
  • Milk - 2 tablespoons
  • Ghee (clarified butter) - 1 teaspoon
  • Saffron strands - a pinch
  • Rose water - 1 teaspoon

Steps

  1. In a mixing bowl, combine the fresh chhena and powdered sugar, and knead until smooth.
  2. Add the finely chopped pistachios, cardamom powder, and milk to the chhena mixture, and mix well to incorporate all ingredients.
  3. Heat ghee in a non-stick pan over low heat, then add the chhena mixture. Cook while stirring continuously for 5-7 minutes until the mixture thickens slightly.
  4. Remove from heat and let it cool slightly, then add the saffron strands and rose water, mixing thoroughly.
  5. Grease your hands with a little ghee, and shape the mixture into small discs or desired shapes.
  6. Place the shaped sandesh on a plate and refrigerate for at least 15 minutes before serving.
