Ingredients

  • Full-fat milk - 500 ml
  • Condensed milk - 100 g
  • Greek yogurt - 100 g
  • Pistachios, unsalted and ground - 50 g
  • Sugar - 30 g
  • Cardamom powder - 1/2 tsp
  • Cornstarch - 1 tbsp
  • Water - 2 tbsp
  • Chopped pistachios for garnish - 10 g

Steps

  1. In a saucepan, heat the full-fat milk over medium heat until it begins to simmer.
  2. In a small bowl, dissolve the cornstarch in 2 tablespoons of water and set aside.
  3. Add the condensed milk, sugar, and cardamom powder to the simmering milk, stirring well to combine.
  4. Once the mixture is well combined, stir in the cornstarch slurry and continue to cook for another 5-7 minutes until the mixture thickens slightly.
  5. Remove the saucepan from heat and allow the mixture to cool to room temperature.
  6. Once cooled, stir in the Greek yogurt and ground pistachios until fully incorporated.
  7. Pour the mixture into kulfi molds or small cups and cover with lids or plastic wrap.
  8. Freeze for at least 6 hours or until the kulfi is firm.
  9. To serve, remove the kulfi from the molds, garnish with chopped pistachios, and enjoy.
