Ingredients
- Full-fat milk - 500 ml
- Condensed milk - 100 g
- Greek yogurt - 100 g
- Pistachios, unsalted and ground - 50 g
- Sugar - 30 g
- Cardamom powder - 1/2 tsp
- Cornstarch - 1 tbsp
- Water - 2 tbsp
- Chopped pistachios for garnish - 10 g
Steps
- In a saucepan, heat the full-fat milk over medium heat until it begins to simmer.
- In a small bowl, dissolve the cornstarch in 2 tablespoons of water and set aside.
- Add the condensed milk, sugar, and cardamom powder to the simmering milk, stirring well to combine.
- Once the mixture is well combined, stir in the cornstarch slurry and continue to cook for another 5-7 minutes until the mixture thickens slightly.
- Remove the saucepan from heat and allow the mixture to cool to room temperature.
- Once cooled, stir in the Greek yogurt and ground pistachios until fully incorporated.
- Pour the mixture into kulfi molds or small cups and cover with lids or plastic wrap.
- Freeze for at least 6 hours or until the kulfi is firm.
- To serve, remove the kulfi from the molds, garnish with chopped pistachios, and enjoy.
