Ingredients

  • Basmati rice - 30 grams
  • Full-fat milk - 500 milliliters
  • Pistachios, shelled and chopped - 50 grams
  • Sugar - 30 grams
  • Cardamom powder - 1/4 teaspoon
  • Saffron strands - a pinch
  • Rose water - 1 teaspoon
  • Chopped almonds - 10 grams (for garnish)
  • Chopped pistachios - 10 grams (for garnish)

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  2. In a heavy-bottomed pot, bring the full-fat milk to a boil over medium heat, stirring occasionally to prevent burning.
  3. Add the soaked and drained rice to the boiling milk, reduce the heat to low, and cook for about 20-25 minutes or until the rice is soft and the mixture thickens, stirring frequently.
  4. Stir in the sugar, chopped pistachios, cardamom powder, saffron strands, and rose water. Cook for another 5-7 minutes until the sugar has dissolved completely.
  5. Remove the pot from heat and let the kheer cool slightly. It can be served warm or chilled.
  6. Garnish with chopped almonds and pistachios before serving.
