- Basmati rice - 30 grams
- Full-fat milk - 500 milliliters
- Pistachios, shelled and chopped - 50 grams
- Sugar - 30 grams
- Cardamom powder - 1/4 teaspoon
- Saffron strands - a pinch
- Rose water - 1 teaspoon
- Chopped almonds - 10 grams (for garnish)
- Chopped pistachios - 10 grams (for garnish)
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- In a heavy-bottomed pot, bring the full-fat milk to a boil over medium heat, stirring occasionally to prevent burning.
- Add the soaked and drained rice to the boiling milk, reduce the heat to low, and cook for about 20-25 minutes or until the rice is soft and the mixture thickens, stirring frequently.
- Stir in the sugar, chopped pistachios, cardamom powder, saffron strands, and rose water. Cook for another 5-7 minutes until the sugar has dissolved completely.
- Remove the pot from heat and let the kheer cool slightly. It can be served warm or chilled.
- Garnish with chopped almonds and pistachios before serving.
