Ingredients

  • Semolina - 100 grams
  • Pineapple (fresh, chopped) - 100 grams
  • Ghee - 2 tablespoons
  • Water - 300 milliliters
  • Sugar - 2 tablespoons
  • Cardamom powder - 1/2 teaspoon
  • Cashews - 10 pieces
  • Raisins - 2 tablespoons
  • Salt - a pinch

Steps

  1. Heat 1 tablespoon of ghee in a pan over medium heat and add the cashews and raisins. Sauté until golden brown and set aside.
  2. In the same pan, add the semolina and roast it on low heat until it turns light golden and aromatic, stirring continuously to avoid burning.
  3. Add the chopped pineapple and sauté for another 2-3 minutes until softened.
  4. Pour in the water and add sugar, salt, and cardamom powder. Stir well and bring the mixture to a boil.
  5. Once boiling, reduce the heat to low and gradually add the roasted semolina while stirring continuously to avoid lumps.
  6. Cover and cook for about 5-7 minutes until the semolina absorbs all the water and becomes fluffy.
  7. Finally, add the remaining ghee and the sautéed cashews and raisins, mixing well. Serve warm.
