- Semolina - 100 grams
- Pineapple (fresh, chopped) - 100 grams
- Ghee - 2 tablespoons
- Water - 300 milliliters
- Sugar - 2 tablespoons
- Cardamom powder - 1/2 teaspoon
- Cashews - 10 pieces
- Raisins - 2 tablespoons
- Salt - a pinch
Steps
- Heat 1 tablespoon of ghee in a pan over medium heat and add the cashews and raisins. Sauté until golden brown and set aside.
- In the same pan, add the semolina and roast it on low heat until it turns light golden and aromatic, stirring continuously to avoid burning.
- Add the chopped pineapple and sauté for another 2-3 minutes until softened.
- Pour in the water and add sugar, salt, and cardamom powder. Stir well and bring the mixture to a boil.
- Once boiling, reduce the heat to low and gradually add the roasted semolina while stirring continuously to avoid lumps.
- Cover and cook for about 5-7 minutes until the semolina absorbs all the water and becomes fluffy.
- Finally, add the remaining ghee and the sautéed cashews and raisins, mixing well. Serve warm.
