Ingredients

  • Pine nuts - 50 grams
  • Water - 1 liter
  • Coconut oil - 1 tablespoon
  • Onion - 1 medium, diced
  • Garlic - 3 cloves, minced
  • Ginger - 1 tablespoon, grated
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Cilantro - 1/4 cup, chopped
  • Turmeric powder - 1 teaspoon
  • Cumin powder - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Salt - to taste
  • Lemon juice - 1 tablespoon

Steps

  1. In a large pot, heat the coconut oil over medium heat.
  2. Add the diced onion, and sauté for about 5 minutes until translucent.
  3. Stir in the minced garlic and grated ginger, cooking for another minute until fragrant.
  4. Add the diced carrot and celery, and cook for an additional 5 minutes, stirring occasionally.
  5. Add the pine nuts, turmeric, cumin, black pepper, and salt to the pot, stirring well to combine.
  6. Pour in the water and bring the mixture to a boil.
  7. Reduce the heat to low and let it simmer for 15-20 minutes to allow the flavors to meld.
  8. Stir in the chopped cilantro and lemon juice just before serving.
  9. Serve hot, garnished with extra cilantro if desired.
