- Pine nuts - 50 grams

- Garlic - 3 cloves, minced

- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Cilantro - 1/4 cup, chopped
- Turmeric powder - 1 teaspoon
- Cumin powder - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Salt - to taste
- Lemon juice - 1 tablespoon
Steps
- In a large pot, heat the coconut oil over medium heat.
- Add the diced onion, and sauté for about 5 minutes until translucent.
- Stir in the minced garlic and grated ginger, cooking for another minute until fragrant.
- Add the diced carrot and celery, and cook for an additional 5 minutes, stirring occasionally.
- Add the pine nuts, turmeric, cumin, black pepper, and salt to the pot, stirring well to combine.
- Pour in the water and bring the mixture to a boil.
- Reduce the heat to low and let it simmer for 15-20 minutes to allow the flavors to meld.
- Stir in the chopped cilantro and lemon juice just before serving.
- Serve hot, garnished with extra cilantro if desired.
