Ingredients
- Gluten-free all-purpose flour - 200 grams
- Active dry yeast - 5 grams
- Warm water - 120 ml
- Sugar - 1 teaspoon
- Salt - 1 teaspoon
- Plain yogurt - 50 grams
- Coconut flakes - 30 grams
- Chopped walnuts - 30 grams
- Chopped almonds - 30 grams
- Ghee (clarified butter) - for brushing
- Sesame seeds - for garnish
Steps
- In a small bowl, dissolve the sugar and yeast in warm water. Let it sit for about 10 minutes until frothy.
- In a large mixing bowl, combine gluten-free flour and salt. Make a well in the center and add the yeast mixture and yogurt.
- Mix together until a soft dough forms. Knead the dough for about 5 minutes until smooth, then cover and let it rise in a warm place for 30 minutes.
- Once risen, punch down the dough and divide it into 2 equal portions. Roll each portion into a ball and then flatten into an oval shape on a floured surface.
- Sprinkle coconut flakes, chopped walnuts, and chopped almonds on top of each oval. Fold the dough over to encase the filling and then roll out gently again into a flatbread shape.
- Heat a tandoor or a skillet over medium-high heat. Place the naan on the hot surface and cook for 2-3 minutes on each side until golden brown and cooked through.
- Brush the cooked naan with melted ghee and sprinkle sesame seeds on top before serving.
