- Green gram (mung beans) - 100 grams
- Water - 200 ml
- Salt - 1/2 teaspoon
- Cumin seeds - 1/2 teaspoon
- Chili powder - 1/2 teaspoon
- Tomato - 1 medium, diced
- Onion - 1 small, finely chopped
- Bell pepper - 1 small, diced
- Olive oil - 1 tablespoon
- Nutritional yeast - 2 tablespoons
- Fresh coriander - a handful, chopped
- Black olives - 10, sliced
- Spinach - 50 grams, chopped
Steps
- Soak the green gram (mung beans) in water for 4-6 hours or overnight.
- Drain the soaked mung beans and blend them with 200 ml of water, salt, cumin seeds, and chili powder until smooth.
- Heat a non-stick pan over medium heat and lightly grease with olive oil.
- Pour a ladleful of the batter onto the pan and spread it into a circle. Cook for 3-4 minutes or until the edges lift and the bottom is golden brown.
- Flip the crepe and cook for an additional 2-3 minutes until the other side is cooked. Remove and set aside. Repeat with the remaining batter to make 2 crepes.
- In the same pan, add more olive oil if necessary and sauté the chopped onions until translucent.
- Add the diced tomatoes, bell pepper, and spinach to the pan, cooking until the vegetables are slightly softened.
- Sprinkle nutritional yeast over the sautéed vegetables and mix well, allowing it to melt slightly.
- Top each green gram crepe with the sautéed vegetable mixture, black olives, and fresh coriander.
