Ingredients

  • Green gram (mung beans) - 100 grams
  • Water - 200 ml
  • Salt - 1/2 teaspoon
  • Cumin seeds - 1/2 teaspoon
  • Chili powder - 1/2 teaspoon
  • Tomato - 1 medium, diced
  • Onion - 1 small, finely chopped
  • Bell pepper - 1 small, diced
  • Olive oil - 1 tablespoon
  • Nutritional yeast - 2 tablespoons
  • Fresh coriander - a handful, chopped
  • Black olives - 10, sliced
  • Spinach - 50 grams, chopped

Steps

  1. Soak the green gram (mung beans) in water for 4-6 hours or overnight.
  2. Drain the soaked mung beans and blend them with 200 ml of water, salt, cumin seeds, and chili powder until smooth.
  3. Heat a non-stick pan over medium heat and lightly grease with olive oil.
  4. Pour a ladleful of the batter onto the pan and spread it into a circle. Cook for 3-4 minutes or until the edges lift and the bottom is golden brown.
  5. Flip the crepe and cook for an additional 2-3 minutes until the other side is cooked. Remove and set aside. Repeat with the remaining batter to make 2 crepes.
  6. In the same pan, add more olive oil if necessary and sauté the chopped onions until translucent.
  7. Add the diced tomatoes, bell pepper, and spinach to the pan, cooking until the vegetables are slightly softened.
  8. Sprinkle nutritional yeast over the sautéed vegetables and mix well, allowing it to melt slightly.
  9. Top each green gram crepe with the sautéed vegetable mixture, black olives, and fresh coriander.
  10. Serve hot and enjoy your Pesarattu Pizza!
