- Green gram (moong dal) - 150 grams
- Onion - 1 medium, finely chopped
- Green chili - 1, finely chopped
- Ginger - 1 teaspoon, grated
- Coriander leaves - 2 tablespoons, chopped
- Cumin powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Turmeric powder - 1/4 teaspoon
- Bread crumbs - 1/4 cup
- Oil - 2 tablespoons (for frying)
- Whole wheat burger buns - 2
- Tomato - 1, sliced
- Cucumber - 1/2, sliced
- Lettuce leaves - 2
- Vegan mayonnaise - 2 tablespoons
Steps
- Soak the green gram (moong dal) in water for 4-6 hours or overnight. Drain and rinse well.
- In a blender, pulse the soaked green gram until it forms a coarse paste. Do not over-blend; it should have some texture.
- In a mixing bowl, combine the green gram paste with chopped onion, green chili, ginger, coriander leaves, cumin powder, salt, black pepper, turmeric powder, and bread crumbs. Mix well to form a dough-like mixture.
- Divide the mixture into 2 equal portions and shape them into patties.
- Heat 1 tablespoon of oil in a non-stick pan over medium heat. Add the patties and cook for about 4-5 minutes on each side, until golden brown and crispy. Add more oil if needed.
- While the patties are cooking, toast the burger buns lightly in another pan or oven until golden.
- Assemble the burgers by spreading vegan mayonnaise on the bottom half of each bun, adding a lettuce leaf, the cooked patty, slices of tomato and cucumber, and then the top half of the bun.
- Serve immediately with your favorite dipping sauce or chutney.
