Ingredients

  • Green gram (moong dal) - 150 grams
  • Onion - 1 medium, finely chopped
  • Green chili - 1, finely chopped
  • Ginger - 1 teaspoon, grated
  • Coriander leaves - 2 tablespoons, chopped
  • Cumin powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Turmeric powder - 1/4 teaspoon
  • Bread crumbs - 1/4 cup
  • Oil - 2 tablespoons (for frying)
  • Whole wheat burger buns - 2
  • Tomato - 1, sliced
  • Cucumber - 1/2, sliced
  • Lettuce leaves - 2
  • Vegan mayonnaise - 2 tablespoons

Steps

  1. Soak the green gram (moong dal) in water for 4-6 hours or overnight. Drain and rinse well.
  2. In a blender, pulse the soaked green gram until it forms a coarse paste. Do not over-blend; it should have some texture.
  3. In a mixing bowl, combine the green gram paste with chopped onion, green chili, ginger, coriander leaves, cumin powder, salt, black pepper, turmeric powder, and bread crumbs. Mix well to form a dough-like mixture.
  4. Divide the mixture into 2 equal portions and shape them into patties.
  5. Heat 1 tablespoon of oil in a non-stick pan over medium heat. Add the patties and cook for about 4-5 minutes on each side, until golden brown and crispy. Add more oil if needed.
  6. While the patties are cooking, toast the burger buns lightly in another pan or oven until golden.
  7. Assemble the burgers by spreading vegan mayonnaise on the bottom half of each bun, adding a lettuce leaf, the cooked patty, slices of tomato and cucumber, and then the top half of the bun.
  8. Serve immediately with your favorite dipping sauce or chutney.
