Ingredients

  • Dried bison or beef - 150 grams
  • Rendered animal fat (tallow or lard) - 100 grams
  • Dried blueberries - 50 grams
  • Sea salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon

Steps

  1. Begin by shredding the dried bison or beef into fine pieces using your hands or a food processor.
  2. In a small pot, melt the rendered animal fat over low heat until it becomes liquid.
  3. In a mixing bowl, combine the shredded meat, dried blueberries, sea salt, and black pepper.
  4. Pour the melted fat into the bowl with the meat mixture and stir thoroughly until everything is well combined.
  5. Line a small baking dish or container with parchment paper and pour the mixture into it, pressing it down firmly to pack it tightly.
  6. Allow the pemmican to cool at room temperature for about 30 minutes, then refrigerate it for at least 30 minutes to firm up.
  7. Once set, cut the pemmican into bars or squares and store in an airtight container in the refrigerator.
