Peda is a delightful Indian dessert traditionally made from condensed milk, but this vegan version uses coconut milk and almond flour for a rich and creamy texture. Ingredients
- Coconut milk - 200 ml
- Almond flour - 100 g
- Maple syrup - 3 tablespoons
- Cardamom powder - 1/2 teaspoon
- Coconut oil - 1 tablespoon
- Chopped pistachios - 2 tablespoons
- Vanilla extract - 1/2 teaspoon
Steps
- In a pan, heat the coconut oil over medium heat and add the coconut milk.
- Bring the coconut milk to a gentle simmer, then add the almond flour, maple syrup, cardamom powder, and vanilla extract.
- Stir continuously for about 10-15 minutes until the mixture thickens and starts to pull away from the sides of the pan.
- Remove from heat and let it cool slightly until it's safe to handle.
- Once cool enough, grease your hands with a little coconut oil and shape the mixture into small, round pedas.
- Place the shaped pedas on a plate and garnish with chopped pistachios.
- Allow the pedas to set for about 10 minutes before serving.
