Peda is a delightful Indian dessert traditionally made from condensed milk, but this vegan version uses coconut milk and almond flour for a rich and creamy texture. Infused with cardamom and garnished with pistachios, these pedas are perfect for satisfying your sweet tooth while keeping it plant-based.

Ingredients

  • Coconut milk - 200 ml
  • Almond flour - 100 g
  • Maple syrup - 3 tablespoons
  • Cardamom powder - 1/2 teaspoon
  • Coconut oil - 1 tablespoon
  • Chopped pistachios - 2 tablespoons
  • Vanilla extract - 1/2 teaspoon

Steps

  1. In a pan, heat the coconut oil over medium heat and add the coconut milk.
  2. Bring the coconut milk to a gentle simmer, then add the almond flour, maple syrup, cardamom powder, and vanilla extract.
  3. Stir continuously for about 10-15 minutes until the mixture thickens and starts to pull away from the sides of the pan.
  4. Remove from heat and let it cool slightly until it's safe to handle.
  5. Once cool enough, grease your hands with a little coconut oil and shape the mixture into small, round pedas.
  6. Place the shaped pedas on a plate and garnish with chopped pistachios.
  7. Allow the pedas to set for about 10 minutes before serving.
