Peas Pulao

Ingredients
- Basmati rice - 1 cup (200g)
- Green peas (fresh or frozen) - 1/2 cup (75g)
- Onion (thinly sliced) - 1 medium (100g)
- Ginger (grated) - 1 teaspoon (5g)
- Garlic (minced) - 1 teaspoon (5g)
- Green chili (slit) - 1 small
- Cumin seeds - 1 teaspoon (2g)
- Bay leaf - 1
- Cardamom pods - 2
- Cloves - 2
- Cinnamon stick - 1 small piece (2g)
- Vegetable oil or ghee - 2 tablespoons (30ml)
- Salt - to taste
- Water - 2 cups (500ml)
- Fresh coriander leaves (for garnish) - a handful
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes. Drain and set aside.
- In a heavy-bottomed pot, heat the vegetable oil or ghee over medium heat. Add the cumin seeds and let them splutter.
- Add the sliced onions and sauté until they turn golden brown, about 5-7 minutes.
- Stir in the grated ginger, minced garlic, and slit green chili, cooking for another 1-2 minutes until fragrant.
- Add the bay leaf, cardamom pods, cloves, and cinnamon stick, stirring them into the onion mixture for a minute.
- Add the green peas and sauté for 2-3 minutes, then add the drained basmati rice. Stir gently to coat the rice with the spices.
- Pour in 2 cups of water and add salt to taste. Bring the mixture to a boil.
- Once boiling, reduce the heat to low, cover the pot with a lid, and simmer for 15-18 minutes until the rice is cooked and all the water is absorbed.
- Remove from heat and let it sit covered for an additional 5 minutes. Fluff the rice with a fork before serving.
- Garnish with fresh coriander leaves and serve hot.
