Ingredients

  • Basmati rice - 1 cup (200g)
  • Green peas (fresh or frozen) - 1/2 cup (75g)
  • Onion (thinly sliced) - 1 medium (100g)
  • Ginger (grated) - 1 teaspoon (5g)
  • Garlic (minced) - 1 teaspoon (5g)
  • Green chili (slit) - 1 small
  • Cumin seeds - 1 teaspoon (2g)
  • Bay leaf - 1
  • Cardamom pods - 2
  • Cloves - 2
  • Cinnamon stick - 1 small piece (2g)
  • Vegetable oil or ghee - 2 tablespoons (30ml)
  • Salt - to taste
  • Water - 2 cups (500ml)
  • Fresh coriander leaves (for garnish) - a handful

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes. Drain and set aside.
  2. In a heavy-bottomed pot, heat the vegetable oil or ghee over medium heat. Add the cumin seeds and let them splutter.
  3. Add the sliced onions and sauté until they turn golden brown, about 5-7 minutes.
  4. Stir in the grated ginger, minced garlic, and slit green chili, cooking for another 1-2 minutes until fragrant.
  5. Add the bay leaf, cardamom pods, cloves, and cinnamon stick, stirring them into the onion mixture for a minute.
  6. Add the green peas and sauté for 2-3 minutes, then add the drained basmati rice. Stir gently to coat the rice with the spices.
  7. Pour in 2 cups of water and add salt to taste. Bring the mixture to a boil.
  8. Once boiling, reduce the heat to low, cover the pot with a lid, and simmer for 15-18 minutes until the rice is cooked and all the water is absorbed.
  9. Remove from heat and let it sit covered for an additional 5 minutes. Fluff the rice with a fork before serving.
  10. Garnish with fresh coriander leaves and serve hot.
