Ingredients

  • Goat trotters (paya) - 500 grams
  • Onion - 1 medium, finely chopped
  • Ginger-garlic paste - 1 tablespoon
  • Tomato - 1 medium, chopped
  • Green chilies - 2, slit
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1 teaspoon
  • Garam masala - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Cumin seeds - 1 teaspoon
  • Bay leaf - 1
  • Cilantro (fresh coriander) - a handful, chopped
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Water - 1.5 liters
  • Oil (mustard or ghee) - 2 tablespoons

Steps

  1. Clean the goat trotters thoroughly under running water and cut them into smaller pieces if necessary.
  2. In a large pot, heat the oil over medium heat, add cumin seeds and bay leaf, and sauté until fragrant.
  3. Add the chopped onions and sauté until they turn golden brown.
  4. Stir in the ginger-garlic paste and green chilies, cooking for another 2-3 minutes until the raw smell disappears.
  5. Add the chopped tomatoes and cook until soft, around 5 minutes.
  6. Sprinkle in the turmeric powder, red chili powder, coriander powder, and salt, mixing well.
  7. Add the cleaned goat trotters to the pot, stirring to coat them with the spices.
  8. Pour in the water, bring to a boil, then reduce the heat to low, cover the pot, and simmer for about 2 hours, or until the trotters are tender and the broth is rich.
  9. After cooking, stir in the garam masala and adjust salt to taste.
  10. Serve hot, garnished with chopped cilantro and a squeeze of lemon juice.
