- Goat trotters (paya) - 500 grams
- Onion - 1 medium, finely chopped
- Ginger-garlic paste - 1 tablespoon
- Tomato - 1 medium, chopped
- Green chilies - 2, slit
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1 teaspoon
- Garam masala - 1 teaspoon
- Coriander powder - 1 teaspoon
- Cumin seeds - 1 teaspoon
- Bay leaf - 1
- Cilantro (fresh coriander) - a handful, chopped
- Lemon juice - 1 tablespoon
- Salt - to taste
- Water - 1.5 liters
- Oil (mustard or ghee) - 2 tablespoons
Steps
- Clean the goat trotters thoroughly under running water and cut them into smaller pieces if necessary.
- In a large pot, heat the oil over medium heat, add cumin seeds and bay leaf, and sauté until fragrant.
- Add the chopped onions and sauté until they turn golden brown.
- Stir in the ginger-garlic paste and green chilies, cooking for another 2-3 minutes until the raw smell disappears.
- Add the chopped tomatoes and cook until soft, around 5 minutes.
- Sprinkle in the turmeric powder, red chili powder, coriander powder, and salt, mixing well.
- Add the cleaned goat trotters to the pot, stirring to coat them with the spices.
- Pour in the water, bring to a boil, then reduce the heat to low, cover the pot, and simmer for about 2 hours, or until the trotters are tender and the broth is rich.
- After cooking, stir in the garam masala and adjust salt to taste.
- Serve hot, garnished with chopped cilantro and a squeeze of lemon juice.
