Ingredients
- Goat trotters - 500 grams
- Onion - 1 large, finely chopped
- Ginger - 1 inch piece, grated
- Garlic - 6 cloves, minced
- Tomato - 1 medium, chopped
- Green chili - 1, slit
- Turmeric powder - 1 teaspoon
- Red chili powder - 1 teaspoon
- Garam masala - 1 teaspoon
- Coriander powder - 1 teaspoon
- Salt - to taste
- Cooking oil - 2 tablespoons
- Fresh coriander leaves - for garnish
- Water - 4 cups
Steps
- Clean the goat trotters thoroughly under running water and soak them in water for 30 minutes.
- In a pressure cooker, heat the cooking oil over medium heat. Add the chopped onions and sauté until golden brown.
- Add the minced garlic and grated ginger to the onions and sauté for another 2 minutes until fragrant.
- Stir in the chopped tomatoes and cook until they soften, about 3-4 minutes.
- Add the turmeric powder, red chili powder, coriander powder, and salt. Mix well and cook for 1-2 minutes.
- Drain the trotters and add them to the pressure cooker, stirring well to coat in the spice mixture.
- Add the slit green chili and 4 cups of water, then close the lid of the pressure cooker.
- Cook on high heat until the pressure builds up, then reduce to low heat and cook for 1.5 hours (3-4 whistles).
- Once done, let the pressure release naturally. Open the lid and check if the trotters are tender; they should be falling off the bone.
- Sprinkle garam masala and garnish with fresh coriander leaves before serving.
