- Egg whites - 2 large
- Granulated sugar - 120 grams
- Cornstarch - 1 teaspoon
- White vinegar - 1 teaspoon
- Cardamom powder - 1/2 teaspoon
- Heavy cream - 100 ml
- Powdered sugar - 1 tablespoon
- Mixed fruits (mango, pomegranate, and kiwi) - 150 grams
- Lemon juice - 1 tablespoon
- Honey - 1 tablespoon
Steps
- Preheat your oven to 120°C (250°F) and line a baking tray with parchment paper.
- In a clean, dry bowl, whisk the egg whites using an electric mixer until soft peaks form.
- Gradually add the granulated sugar, one tablespoon at a time, whisking until the mixture is glossy and stiff peaks form.
- Gently fold in the cornstarch, vinegar, and cardamom powder until just combined.
- Spoon the meringue mixture onto the prepared baking tray, shaping it into a disk about 15 cm in diameter, with a slight well in the center.
- Bake in the preheated oven for 60 minutes, then turn off the oven and leave the meringue inside to cool completely.
- While the meringue cools, prepare the fruit compote by combining the mixed fruits, lemon juice, and honey in a bowl. Let it sit for about 15 minutes to macerate.
- Once the meringue is cool, whip the heavy cream with powdered sugar until soft peaks form.
- To assemble, place the meringue on a serving plate, top with whipped cream, and spoon the fruit compote over the top.
