Ingredients

  • Egg whites - 2 large
  • Granulated sugar - 120 grams
  • Cornstarch - 1 teaspoon
  • White vinegar - 1 teaspoon
  • Cardamom powder - 1/2 teaspoon
  • Heavy cream - 100 ml
  • Powdered sugar - 1 tablespoon
  • Mixed fruits (mango, pomegranate, and kiwi) - 150 grams
  • Lemon juice - 1 tablespoon
  • Honey - 1 tablespoon

Steps

  1. Preheat your oven to 120°C (250°F) and line a baking tray with parchment paper.
  2. In a clean, dry bowl, whisk the egg whites using an electric mixer until soft peaks form.
  3. Gradually add the granulated sugar, one tablespoon at a time, whisking until the mixture is glossy and stiff peaks form.
  4. Gently fold in the cornstarch, vinegar, and cardamom powder until just combined.
  5. Spoon the meringue mixture onto the prepared baking tray, shaping it into a disk about 15 cm in diameter, with a slight well in the center.
  6. Bake in the preheated oven for 60 minutes, then turn off the oven and leave the meringue inside to cool completely.
  7. While the meringue cools, prepare the fruit compote by combining the mixed fruits, lemon juice, and honey in a bowl. Let it sit for about 15 minutes to macerate.
  8. Once the meringue is cool, whip the heavy cream with powdered sugar until soft peaks form.
  9. To assemble, place the meringue on a serving plate, top with whipped cream, and spoon the fruit compote over the top.
