- Bitter gourd (pavakkai) - 200 grams
- Rice flour - 50 grams
- Gram flour (besan) - 30 grams
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1 teaspoon
- Cumin powder - 1/2 teaspoon
- Salt - to taste
- Coriander leaves (chopped) - 2 tablespoons
- Oil - for frying
Steps
- Wash the bitter gourd thoroughly, slice it thinly, and remove the seeds if necessary.
- In a bowl, mix the sliced bitter gourd with salt, turmeric powder, red chili powder, and cumin powder. Let it sit for 10 minutes to allow the bitter gourd to release some moisture.
- Add rice flour and gram flour to the marinated bitter gourd and mix well until the slices are coated evenly.
- Heat oil in a frying pan over medium heat. Once the oil is hot, carefully drop the coated bitter gourd slices into the oil in batches.
- Fry the slices until they are golden brown and crispy, about 5-7 minutes per batch. Remove them and place on paper towels to absorb excess oil.
- Garnish with chopped coriander leaves and serve hot.
