Ingredients

  • Bitter gourd (pavakkai) - 200 grams
  • Rice flour - 50 grams
  • Gram flour (besan) - 30 grams
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1 teaspoon
  • Cumin powder - 1/2 teaspoon
  • Salt - to taste
  • Coriander leaves (chopped) - 2 tablespoons
  • Oil - for frying

Steps

  1. Wash the bitter gourd thoroughly, slice it thinly, and remove the seeds if necessary.
  2. In a bowl, mix the sliced bitter gourd with salt, turmeric powder, red chili powder, and cumin powder. Let it sit for 10 minutes to allow the bitter gourd to release some moisture.
  3. Add rice flour and gram flour to the marinated bitter gourd and mix well until the slices are coated evenly.
  4. Heat oil in a frying pan over medium heat. Once the oil is hot, carefully drop the coated bitter gourd slices into the oil in batches.
  5. Fry the slices until they are golden brown and crispy, about 5-7 minutes per batch. Remove them and place on paper towels to absorb excess oil.
  6. Garnish with chopped coriander leaves and serve hot.
