- Semolina (Rava) - 100 grams

- Tomato - 1 medium, finely chopped
- Green chili - 1, slit
- Ginger - 1 teaspoon, grated
- Mustard seeds - 1 teaspoon
- Cumin seeds - 1/2 teaspoon
- Turmeric powder - 1/4 teaspoon
- Salt - to taste
- Curry leaves - 8-10 leaves
- Vegetable oil - 2 tablespoons
- Water - 400 milliliters
- Pav (bread rolls) - 4
- Fresh coriander leaves - for garnish, chopped
Steps
- Heat oil in a pan over medium heat. Add mustard seeds and let them splutter.
- Add cumin seeds, curry leaves, and green chili. Sauté for a minute until fragrant.
- Add chopped onions and ginger. Cook until onions are translucent.
- Stir in chopped tomatoes, turmeric powder, and salt. Cook until tomatoes soften.
- Add semolina to the mixture and roast for 2-3 minutes until it turns light golden.
- Pour in water and stir well to avoid lumps. Cook until the mixture thickens and the semolina absorbs the water, about 5-7 minutes.
- Meanwhile, toast the pav in a separate pan until golden brown.
- Serve the upma hot, garnished with fresh coriander and accompanied by the toasted pav.
