Ingredients

  • Semolina (Rava) - 100 grams
  • Onion - 1 medium, finely chopped
  • Tomato - 1 medium, finely chopped
  • Green chili - 1, slit
  • Ginger - 1 teaspoon, grated
  • Mustard seeds - 1 teaspoon
  • Cumin seeds - 1/2 teaspoon
  • Turmeric powder - 1/4 teaspoon
  • Salt - to taste
  • Curry leaves - 8-10 leaves
  • Vegetable oil - 2 tablespoons
  • Water - 400 milliliters
  • Pav (bread rolls) - 4
  • Fresh coriander leaves - for garnish, chopped

Steps

  1. Heat oil in a pan over medium heat. Add mustard seeds and let them splutter.
  2. Add cumin seeds, curry leaves, and green chili. Sauté for a minute until fragrant.
  3. Add chopped onions and ginger. Cook until onions are translucent.
  4. Stir in chopped tomatoes, turmeric powder, and salt. Cook until tomatoes soften.
  5. Add semolina to the mixture and roast for 2-3 minutes until it turns light golden.
  6. Pour in water and stir well to avoid lumps. Cook until the mixture thickens and the semolina absorbs the water, about 5-7 minutes.
  7. Meanwhile, toast the pav in a separate pan until golden brown.
  8. Serve the upma hot, garnished with fresh coriander and accompanied by the toasted pav.
