- Split yellow moong dal - 100 grams
- Boiled potatoes - 100 grams
- Green chili - 1, finely chopped
- Ginger - 1 teaspoon, grated
- Cumin seeds - 1 teaspoon
- Coriander powder - 1 teaspoon
- Garam masala - 1/2 teaspoon
- Asafoetida - a pinch
- Salt - to taste
- Rice flour - 50 grams
- Potato starch - 30 grams
- Water - as needed
- Oil - for frying
- Pav bread (gluten-free) - 4 pieces
- Chutney (tamarind or mint) - for serving
Steps
- Soak the split yellow moong dal in water for 2-3 hours, then drain and grind to a coarse paste.
- In a mixing bowl, combine the ground moong dal, boiled potatoes (mashed), green chili, ginger, cumin seeds, coriander powder, garam masala, asafoetida, and salt. Mix well to form a uniform filling.
- Divide the filling into equal portions and shape them into small balls.
- In another bowl, mix rice flour and potato starch, adding enough water to form a smooth, pliable dough.
- Take a small portion of the dough, flatten it into a disc, and place a filling ball in the center. Fold the edges over the filling and seal it, then gently flatten the kachori.
- Heat oil in a deep frying pan over medium heat. Once hot, carefully slide the kachoris into the oil, frying until golden brown and crisp on both sides.
- Remove the kachoris and place them on a paper towel to drain excess oil.
- Warm the gluten-free pav in a pan or microwave, and serve the hot kachoris with pav and chutney.
