- Onion - 1 medium, finely chopped
- Tomato - 1 medium, finely chopped
- Ginger-garlic paste - 1 tablespoon
- Pav Bhaji masala - 2 teaspoons
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1 teaspoon
- Salt - to taste
- Butter - 20 grams
- Cheese (grated) - 50 grams
- Cilantro - for garnish
- Lemon wedges - for serving

Steps
- Boil the potatoes, cauliflower, peas, and carrots in a pot for about 15 minutes until tender. Drain and mash them together in a large bowl.
- In a pan, heat 10 grams of butter over medium heat. Add chopped onions and sauté until translucent.
- Stir in the ginger-garlic paste, and sauté for another minute until fragrant.
- Add the chopped tomatoes, and cook until they soften. Then, add turmeric powder, red chili powder, and salt, mixing well.
- Add the mashed vegetables to the pan and incorporate them into the mixture. Stir in Pav Bhaji masala and cook for an additional 5-7 minutes, stirring occasionally.
- While the bhaji is cooking, heat a separate pan and toast the Pav (bread rolls) with the remaining butter until golden brown.
- Serve the bhaji hot, topped with grated cheese and garnished with chopped cilantro, alongside the toasted Pav and lemon wedges.
