Ingredients

  • Potato - 150 grams, boiled and mashed
  • Cauliflower - 100 grams, finely chopped
  • Green peas - 50 grams, boiled
  • Carrot - 50 grams, finely chopped
  • Capsicum (Bell pepper) - 50 grams, finely chopped
  • Onion - 1 medium, finely chopped
  • Tomato - 1 medium, pureed
  • Ginger - 1 teaspoon, minced
  • Garlic - 2 cloves, minced
  • Green chili - 1, finely chopped
  • Pav Bhaji masala - 2 tablespoons
  • Turmeric powder - 1/2 teaspoon
  • Salt - to taste
  • Butter - 30 grams (for bhaji) + 20 grams (for serving)
  • Cilantro - for garnish
  • Pav (bread rolls) - 4 pieces

Steps

  1. In a large skillet, heat 30 grams of butter over medium heat. Add the chopped onions and sauté until translucent.
  2. Add the minced ginger, garlic, and green chili, and sauté for another 2 minutes until fragrant.
  3. Stir in the chopped cauliflower, carrots, and capsicum. Cook for about 5-7 minutes until they soften.
  4. Add the boiled and mashed potatoes, boiled peas, and tomato puree. Mix well.
  5. Sprinkle the turmeric powder, salt, and Pav Bhaji masala over the mixture. Mash everything together using a potato masher while mixing it well.
  6. Add a splash of water if needed to reach the desired consistency. Let it simmer for 5-10 minutes, stirring occasionally.
  7. While the bhaji is cooking, slice the Pav rolls in half and heat the remaining 20 grams of butter in a separate pan over medium heat.
  8. Toast the Pav rolls in the butter until golden brown on both sides.
  9. Serve the Pav Bhaji hot, garnished with chopped cilantro and a dollop of butter on top, alongside the toasted Pav rolls.
