- Cauliflower - 100 grams
- Potato - 100 grams
- Green peas - 50 grams
- Carrot - 50 grams
- Onion - 1 medium, chopped
- Tomato - 1 medium, chopped
- Ginger-garlic paste - 1 teaspoon
- Pav bhaji masala - 1 tablespoon
- Turmeric powder - 1/4 teaspoon
- Cilantro - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Salt - to taste
- Taco shells - 4 pieces
- Oil - 1 tablespoon
- Chaat masala - for sprinkling
- Green chutney - for serving

Steps
- Boil the cauliflower, potato, green peas, and carrot in salted water until tender, about 10-12 minutes. Drain and mash them together in a bowl.
- In a pan, heat oil over medium heat. Add chopped onion and sauté until translucent, then stir in ginger-garlic paste and cook for an additional 1-2 minutes.
- Add chopped tomato, turmeric powder, and pav bhaji masala to the pan, cooking until the tomato softens and oil begins to separate, about 5 minutes.
- Combine the mashed vegetables with the sautéed mixture, adding salt to taste. Cook for another 5 minutes, stirring occasionally.
- Remove the mixture from heat and stir in chopped cilantro and lemon juice.
- Warm the taco shells in an oven or skillet until crispy.
- Fill each taco shell with the pav bhaji mixture, then top with diced onion, diced tomato, and a sprinkle of chaat masala.
- Serve the tacos with green chutney on the side for dipping.
