Ingredients
- Mixed vegetables (potatoes, peas, carrots, bell pepper) - 300 grams
- Onion - 1 medium, finely chopped
- Tomato - 1 medium, finely chopped
- Ginger-garlic paste - 1 tablespoon
- Pav Bhaji masala - 2 tablespoons
- Lemon juice - 1 tablespoon
- Fresh coriander - 2 tablespoons, chopped
- Salt - to taste
- Olive oil - 2 tablespoons
- Pav (bread rolls) - 4
- Butter - 2 tablespoons
- Skewers - 4 (soaked in water if wooden)
Steps
- Boil the mixed vegetables until tender, then drain and mash them coarsely.
- In a pan, heat 1 tablespoon of olive oil over medium heat and sauté the chopped onion until translucent.
- Add the ginger-garlic paste and sauté for another minute until fragrant.
- Stir in the chopped tomatoes and cook until they soften, then add the Pav Bhaji masala, salt, and the mashed vegetables.
- Mix well, add lemon juice and chopped coriander, and cook for another 5 minutes. Remove from heat and let the mixture cool slightly.
- Preheat the grill or a grill pan over medium-high heat.
- Take a portion of the vegetable mixture and shape it onto a skewer, pressing firmly to ensure it holds. Repeat for the remaining skewers.
- Brush the skewers with the remaining olive oil and grill for about 8-10 minutes, turning occasionally until they are slightly charred and heated through.
- While the skewers are grilling, slice the pav rolls in half and toast them in butter until golden brown.
- Serve the Pav Bhaji Skewers hot with the toasted pav and extra coriander on the side.
