Ingredients

  • All-purpose flour - 200 grams
  • Warm water - 100 ml
  • Instant yeast - 5 grams
  • Sugar - 5 grams
  • Salt - 5 grams
  • Olive oil - 15 ml
  • Potatoes - 100 grams, boiled and mashed
  • Cauliflower - 100 grams, finely chopped
  • Green peas - 50 grams, boiled
  • Onion - 1 medium, finely chopped
  • Tomato - 1 medium, finely chopped
  • Ginger-garlic paste - 1 teaspoon
  • Pav Bhaji masala - 1 tablespoon
  • Red chili powder - 1/2 teaspoon
  • Cilantro - a handful, chopped
  • Lemon juice - 1 tablespoon
  • Butter - 20 grams
  • Salt - to taste

Steps

  1. In a bowl, mix all-purpose flour, instant yeast, sugar, and salt. Gradually add warm water and knead to form a soft dough. Add olive oil and knead for another 5 minutes. Cover and let it rise in a warm place for 30 minutes.
  2. In a pan, heat butter over medium heat. Add chopped onions and sauté until translucent. Add ginger-garlic paste and sauté for another minute.
  3. Add chopped tomatoes, red chili powder, and pav bhaji masala. Cook until the tomatoes soften.
  4. Stir in the mashed potatoes, chopped cauliflower, and boiled peas. Mix well and cook for 5-7 minutes. Add salt, lemon juice, and chopped cilantro. Remove from heat and let the mixture cool.
  5. Preheat the oven to 180°C (350°F). Once the dough has risen, punch it down and divide it into equal portions. Roll each portion into a small circle.
  6. Place a spoonful of the bhaji filling in the center of each circle and fold the edges to seal, forming a pocket. Place the pockets on a baking tray lined with parchment paper.
  7. Bake in the preheated oven for 15-20 minutes or until golden brown. Serve hot with chutney or ketchup.
