- All-purpose flour - 200 grams
- Warm water - 100 ml
- Instant yeast - 5 grams
- Sugar - 5 grams
- Salt - 5 grams
- Olive oil - 15 ml
- Potatoes - 100 grams, boiled and mashed
- Cauliflower - 100 grams, finely chopped
- Green peas - 50 grams, boiled
- Onion - 1 medium, finely chopped
- Tomato - 1 medium, finely chopped
- Ginger-garlic paste - 1 teaspoon
- Pav Bhaji masala - 1 tablespoon
- Red chili powder - 1/2 teaspoon
- Cilantro - a handful, chopped
- Lemon juice - 1 tablespoon
- Butter - 20 grams
- Salt - to taste
Steps
- In a bowl, mix all-purpose flour, instant yeast, sugar, and salt. Gradually add warm water and knead to form a soft dough. Add olive oil and knead for another 5 minutes. Cover and let it rise in a warm place for 30 minutes.
- In a pan, heat butter over medium heat. Add chopped onions and sauté until translucent. Add ginger-garlic paste and sauté for another minute.
- Add chopped tomatoes, red chili powder, and pav bhaji masala. Cook until the tomatoes soften.
- Stir in the mashed potatoes, chopped cauliflower, and boiled peas. Mix well and cook for 5-7 minutes. Add salt, lemon juice, and chopped cilantro. Remove from heat and let the mixture cool.
- Preheat the oven to 180°C (350°F). Once the dough has risen, punch it down and divide it into equal portions. Roll each portion into a small circle.
- Place a spoonful of the bhaji filling in the center of each circle and fold the edges to seal, forming a pocket. Place the pockets on a baking tray lined with parchment paper.
- Bake in the preheated oven for 15-20 minutes or until golden brown. Serve hot with chutney or ketchup.
