Ingredients

  • Pizza base - 1 large (about 30 cm)
  • Mixed vegetables (potatoes, peas, carrots, bell peppers, chopped) - 300 grams
  • Onion (finely chopped) - 1 medium
  • Tomato (pureed) - 2 medium
  • Garlic (minced) - 2 cloves
  • Ginger (grated) - 1 teaspoon
  • Pav Bhaji masala - 2 tablespoons
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Salt - to taste
  • Cilantro (chopped) - 2 tablespoons
  • Vegan cheese (grated) - 100 grams
  • Olive oil - 1 tablespoon
  • Lemon juice - 1 tablespoon

Steps

  1. Boil the mixed vegetables in water until soft, then drain and mash them roughly.
  2. In a pan, heat olive oil over medium heat, add chopped onions, and sauté until translucent.
  3. Add minced garlic and grated ginger, and sauté for another minute until fragrant.
  4. Stir in the pureed tomatoes and cook until the mixture thickens and the oil separates.
  5. Add the mashed vegetables, Pav Bhaji masala, turmeric powder, red chili powder, coriander powder, and salt. Mix well and cook for about 5-7 minutes until well combined.
  6. Remove from heat and stir in chopped cilantro and lemon juice.
  7. Preheat the oven to 220°C (428°F).
  8. Spread the prepared vegetable mixture evenly over the pizza base.
  9. Sprinkle grated vegan cheese on top.
  10. Bake in the preheated oven for 12-15 minutes or until the cheese is melted and the crust is golden.
  11. Remove from oven, slice, and serve hot.
