Ingredients

  • Potatoes - 200 grams
  • Mixed bell peppers - 100 grams
  • Green peas - 100 grams
  • Onion - 1 medium, finely chopped
  • Tomato - 1 medium, finely chopped
  • Ginger-garlic paste - 1 teaspoon
  • Pav Bhaji masala - 2 teaspoons
  • Red chili powder - 1/2 teaspoon
  • Turmeric powder - 1/4 teaspoon
  • Salt - to taste
  • Butter - 2 tablespoons
  • Cilantro - a handful, chopped
  • Lemon - 1, juiced
  • Sev (crispy chickpea noodles) - for garnish
  • Chaat masala - for garnish
  • Gluten-free pav bread - 4 pieces

Steps

  1. Boil the potatoes in salted water until tender, about 15 minutes. Drain and mash them.
  2. In a pan, heat 1 tablespoon of butter. Add the chopped onions and sauté until golden brown.
  3. Add the ginger-garlic paste and sauté for another minute until fragrant.
  4. Stir in the chopped tomatoes and cook until soft, about 5 minutes.
  5. Add the mixed bell peppers and green peas, cooking for another 5 minutes until they are tender.
  6. Mix in the boiled mashed potatoes, Pav Bhaji masala, red chili powder, turmeric powder, and salt. Mash everything together and cook for an additional 5 minutes, stirring occasionally.
  7. Remove from heat and add chopped cilantro and lemon juice, mixing well.
  8. In a separate pan, toast the gluten-free pav bread in the remaining butter until golden.
  9. To serve, place a portion of the bhaji on a plate, top with sev and a sprinkle of chaat masala. Serve with toasted pav on the side.
