- Potatoes - 200 grams
- Mixed bell peppers - 100 grams
- Green peas - 100 grams
- Onion - 1 medium, finely chopped
- Tomato - 1 medium, finely chopped
- Ginger-garlic paste - 1 teaspoon
- Pav Bhaji masala - 2 teaspoons
- Red chili powder - 1/2 teaspoon
- Turmeric powder - 1/4 teaspoon
- Salt - to taste
- Butter - 2 tablespoons
- Cilantro - a handful, chopped
- Lemon - 1, juiced
- Sev (crispy chickpea noodles) - for garnish
- Chaat masala - for garnish
- Gluten-free pav bread - 4 pieces
Steps
- Boil the potatoes in salted water until tender, about 15 minutes. Drain and mash them.
- In a pan, heat 1 tablespoon of butter. Add the chopped onions and sauté until golden brown.
- Add the ginger-garlic paste and sauté for another minute until fragrant.
- Stir in the chopped tomatoes and cook until soft, about 5 minutes.
- Add the mixed bell peppers and green peas, cooking for another 5 minutes until they are tender.
- Mix in the boiled mashed potatoes, Pav Bhaji masala, red chili powder, turmeric powder, and salt. Mash everything together and cook for an additional 5 minutes, stirring occasionally.
- Remove from heat and add chopped cilantro and lemon juice, mixing well.
- In a separate pan, toast the gluten-free pav bread in the remaining butter until golden.
- To serve, place a portion of the bhaji on a plate, top with sev and a sprinkle of chaat masala. Serve with toasted pav on the side.
