- Green chili - 1, finely chopped
- Ginger-garlic paste - 1 teaspoon
- Pav bhaji masala - 1 tablespoon
- Turmeric powder - 1/2 teaspoon
- Salt - to taste
- Lemon juice - 1 tablespoon
- Coriander leaves - a handful, chopped

- Vegan butter - 1 tablespoon
- Lettuce leaves - 2
- Sliced onions - 2
- Sliced tomatoes - 2
Steps
- Boil the mixed vegetables until tender, then drain and mash them in a bowl.
- In a pan, heat a tablespoon of oil and add chopped onions, sautéing until golden brown.
- Add the ginger-garlic paste and green chili, and sauté for another minute.
- Stir in the chopped tomatoes, turmeric powder, and salt, cooking until the tomatoes soften.
- Add the mashed vegetables to the pan along with pav bhaji masala and mix well. Cook for 5-7 minutes, stirring occasionally.
- Add lemon juice and chopped coriander leaves, mixing until combined, then remove from heat.
- In a separate pan, melt vegan butter and toast the burger buns until golden brown.
- Assemble the burgers by placing a generous scoop of the vegetable mash on the bottom half of each bun, topping with lettuce, sliced onions, and tomatoes, then cover with the top half of the bun.
- Serve hot with a side of chopped onions and lemon wedges.
