- Onion - 1 small, finely chopped
- Tomato - 1 medium, finely chopped
- Bell pepper - 1 small, finely chopped
- Ginger - 1 teaspoon, grated
- Garlic - 1 teaspoon, minced
- Pav bhaji masala - 2 teaspoons
- Red chili powder - 1/2 teaspoon
- Salt - to taste
- Cilantro - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Bread slices - 4
- Oil - for shallow frying
- Tamarind chutney - for serving
Steps
- Boil the potatoes, cauliflower, and green peas until tender. Drain and mash them together in a bowl.
- In a pan, heat 1 tablespoon of oil over medium heat. Add the chopped onion and sauté until translucent.
- Add the ginger, garlic, and chopped bell pepper to the pan, cooking for an additional 2-3 minutes until softened.
- Stir in the chopped tomatoes, pav bhaji masala, red chili powder, and salt. Cook until the tomatoes break down and the mixture thickens.
- Combine the mashed vegetables with the sautéed mixture, add cilantro, and lemon juice. Mix well and let cool slightly.
- Cut the bread slices into quarters. Take a portion of the bhaji mixture and form small balls or patties.
- Place each ball between two pieces of bread, pressing down lightly to create a sandwich. Repeat for all portions.
- In a pan, heat oil for shallow frying. Fry each pav bhaji bite until golden brown on both sides, about 2-3 minutes per side.
- Remove and drain on paper towels. Serve hot with tamarind chutney.
