Ingredients

  • Potatoes - 150 grams
  • Green peas - 50 grams
  • Cauliflower - 100 grams
  • Onion - 1 small, finely chopped
  • Tomato - 1 medium, finely chopped
  • Bell pepper - 1 small, finely chopped
  • Ginger - 1 teaspoon, grated
  • Garlic - 1 teaspoon, minced
  • Pav bhaji masala - 2 teaspoons
  • Red chili powder - 1/2 teaspoon
  • Salt - to taste
  • Cilantro - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Bread slices - 4
  • Oil - for shallow frying
  • Tamarind chutney - for serving

Steps

  1. Boil the potatoes, cauliflower, and green peas until tender. Drain and mash them together in a bowl.
  2. In a pan, heat 1 tablespoon of oil over medium heat. Add the chopped onion and sauté until translucent.
  3. Add the ginger, garlic, and chopped bell pepper to the pan, cooking for an additional 2-3 minutes until softened.
  4. Stir in the chopped tomatoes, pav bhaji masala, red chili powder, and salt. Cook until the tomatoes break down and the mixture thickens.
  5. Combine the mashed vegetables with the sautéed mixture, add cilantro, and lemon juice. Mix well and let cool slightly.
  6. Cut the bread slices into quarters. Take a portion of the bhaji mixture and form small balls or patties.
  7. Place each ball between two pieces of bread, pressing down lightly to create a sandwich. Repeat for all portions.
  8. In a pan, heat oil for shallow frying. Fry each pav bhaji bite until golden brown on both sides, about 2-3 minutes per side.
  9. Remove and drain on paper towels. Serve hot with tamarind chutney.
