Ingredients

  • Potatoes - 200 grams
  • Mixed vegetables (peas, carrots, bell peppers) - 150 grams
  • Onion - 1 medium, finely chopped
  • Tomato - 1 large, chopped
  • Ginger-garlic paste - 1 tablespoon
  • Pav bhaji masala - 2 teaspoons
  • Salt - to taste
  • Butter - 30 grams
  • Oil - 1 tablespoon
  • Bread rolls (pav) - 4 pieces
  • Grated cheese (cheddar or mozzarella) - 100 grams
  • Fresh coriander leaves - for garnish

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Boil the potatoes in salted water until tender, then drain and mash them.
  3. In a large pan, heat the oil and 15 grams of butter over medium heat. Add the chopped onions and sauté until they are translucent.
  4. Stir in the ginger-garlic paste and cook for another minute until fragrant.
  5. Add the chopped tomatoes and cook until they soften, then mix in the mixed vegetables and cook for 5-7 minutes.
  6. Add the mashed potatoes, pav bhaji masala, and salt. Mix well and cook for another 5 minutes, allowing the flavors to meld.
  7. Remove the pan from heat and let the mixture cool slightly.
  8. Cut the bread rolls in half and spread the remaining butter on each half.
  9. In a baking dish, spread the bhaji mixture evenly, then place the buttered bread halves on top.
  10. Sprinkle the grated cheese generously over the bread.
  11. Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and golden brown.
  12. Remove from the oven, garnish with fresh coriander leaves, and serve hot.
