- Potatoes - 200 grams
- Mixed vegetables (peas, carrots, bell peppers) - 150 grams
- Onion - 1 medium, finely chopped
- Tomato - 1 large, chopped
- Ginger-garlic paste - 1 tablespoon
- Pav bhaji masala - 2 teaspoons
- Salt - to taste
- Butter - 30 grams
- Oil - 1 tablespoon
- Bread rolls (pav) - 4 pieces
- Grated cheese (cheddar or mozzarella) - 100 grams
- Fresh coriander leaves - for garnish
Steps
- Preheat the oven to 180°C (350°F).
- Boil the potatoes in salted water until tender, then drain and mash them.
- In a large pan, heat the oil and 15 grams of butter over medium heat. Add the chopped onions and sauté until they are translucent.
- Stir in the ginger-garlic paste and cook for another minute until fragrant.
- Add the chopped tomatoes and cook until they soften, then mix in the mixed vegetables and cook for 5-7 minutes.
- Add the mashed potatoes, pav bhaji masala, and salt. Mix well and cook for another 5 minutes, allowing the flavors to meld.
- Remove the pan from heat and let the mixture cool slightly.
- Cut the bread rolls in half and spread the remaining butter on each half.
- In a baking dish, spread the bhaji mixture evenly, then place the buttered bread halves on top.
- Sprinkle the grated cheese generously over the bread.
- Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and golden brown.
- Remove from the oven, garnish with fresh coriander leaves, and serve hot.
