Ingredients

  • Potatoes - 200 grams
  • Cauliflower - 100 grams
  • Green peas - 100 grams
  • Carrots - 100 grams
  • Bell pepper (capsicum) - 50 grams
  • Tomatoes - 2 medium-sized
  • Onion - 1 medium-sized
  • Ginger - 1 teaspoon, grated
  • Garlic - 4 cloves, minced
  • Green chilies - 1, chopped
  • Pav Bhaji masala - 2 tablespoons
  • Turmeric powder - 1/2 teaspoon
  • Salt - to taste
  • Cilantro (coriander leaves) - for garnish
  • Lemon - for serving
  • Pav (bread rolls) - 4 pieces
  • Vegan butter - 2 tablespoons

Steps

  1. Boil the potatoes, cauliflower, green peas, and carrots in a pot until soft. Drain and set aside.
  2. In a large pan, heat 1 tablespoon of vegan butter over medium heat. Add chopped onions and sauté until golden brown.
  3. Add grated ginger, minced garlic, and chopped green chilies. Sauté for another 2 minutes until fragrant.
  4. Chop the tomatoes and add them to the pan. Cook until they soften and oil starts to separate.
  5. Add the boiled vegetables to the pan and mash them using a potato masher. Mix well.
  6. Stir in the Pav Bhaji masala, turmeric powder, and salt. Cook for another 5-7 minutes, adding a little water if needed to achieve desired consistency.
  7. In a separate pan, heat the remaining vegan butter and toast the Pav (bread rolls) until golden brown on both sides.
  8. Serve the Bhaji hot, garnished with chopped cilantro and a wedge of lemon, alongside the toasted Pav.
