- Potatoes - 200 grams
- Cauliflower - 100 grams
- Green peas - 100 grams
- Carrots - 100 grams
- Bell pepper (capsicum) - 50 grams
- Tomatoes - 2 medium-sized
- Onion - 1 medium-sized
- Ginger - 1 teaspoon, grated
- Garlic - 4 cloves, minced
- Green chilies - 1, chopped
- Pav Bhaji masala - 2 tablespoons
- Turmeric powder - 1/2 teaspoon
- Salt - to taste
- Cilantro (coriander leaves) - for garnish
- Lemon - for serving
- Pav (bread rolls) - 4 pieces
- Vegan butter - 2 tablespoons
Steps
- Boil the potatoes, cauliflower, green peas, and carrots in a pot until soft. Drain and set aside.
- In a large pan, heat 1 tablespoon of vegan butter over medium heat. Add chopped onions and sauté until golden brown.
- Add grated ginger, minced garlic, and chopped green chilies. Sauté for another 2 minutes until fragrant.
- Chop the tomatoes and add them to the pan. Cook until they soften and oil starts to separate.
- Add the boiled vegetables to the pan and mash them using a potato masher. Mix well.
- Stir in the Pav Bhaji masala, turmeric powder, and salt. Cook for another 5-7 minutes, adding a little water if needed to achieve desired consistency.
- In a separate pan, heat the remaining vegan butter and toast the Pav (bread rolls) until golden brown on both sides.
- Serve the Bhaji hot, garnished with chopped cilantro and a wedge of lemon, alongside the toasted Pav.
