Ingredients
- All-purpose flour - 150 grams
- Ghee (clarified butter) - 30 grams
- Water - 50 ml
- Sugar - 50 grams
- Khoya (dried milk) - 100 grams
- Chopped nuts (cashews, almonds) - 30 grams
- Cardamom powder - 1/2 teaspoon
- Oil (for frying) - 500 ml
Steps
- In a mixing bowl, combine all-purpose flour and ghee, and mix until crumbly.
- Gradually add water to form a smooth dough. Cover the dough with a damp cloth and let it rest for 20 minutes.
- In a pan, heat a little ghee and add khoya, stirring until it melts. Add sugar, chopped nuts, and cardamom powder, and mix well until combined. Remove from heat and let it cool.
- Divide the dough into small balls. Roll each ball into a thin circle, then cut it in half to form two semi-circles.
- Take one semi-circle, fold it into a cone shape, and seal the edge with a little water.
- Fill the cone with the khoya mixture and seal the open edge by pressing it firmly. Repeat with the remaining dough and filling.
- In a deep pan, heat oil for frying. Once hot, carefully add the samosas in batches, frying until golden brown and crispy.
- Remove the samosas and drain on paper towels. Serve warm.
